Pumpkin Roll 3 eggs 1 c sugar 3/4 c flour 2 tsp cinnamon 1 tsp ginger 1/2tsp nutmeg 1 tsp baking soda 1/2 tsp salt 2/3 c canned pumpkin 8 oz chopped walnuts Grease jelly roll pan and line with parchment paper. Preheat oven to 350�. In large bowl, beat eggs for 5 minutes. Gradually add sugar, beat until light. Mix in flour, cinnamon, ginger, nutmeg, soda, salt and pumpkin, blend well. Pour into prepared pan and sprinkle with nuts. Bake 15 minutes. Turn out onto clean kitchen towel, and roll up into towel. Cool. Frosting: 6 oz cream cheese 1 c powdered sugar 1 tsp vanilla 2 T butter Combine all ingredients and beat until smooth. Unroll cooled cake, remove towel, spread with frosting and roll back up. Chill well, slice to serve. Hearty Pork Stew with Squash Source: Penzey�s 2/09 1\-1/2 lb boneless pork loin roast, trimmed and cubed (I used boneless chops) 3 medium carrots, peeled and cut into 1/4" slices 1 medium onion, chopped 2 c peeld parsnips, cubed 1\-1/2 c butternut squash, peeled & cubed 4 c chicken broth 1 T fresh sage or 1 tsp dried 2 tsp fresh thyme or 3/4 tsp dried 1/2 tsp salt 1/2 tsp pepper 3 T flour 3 T butter, softened In 4\-5 quart slow cooker, mix the pork and remaining ingredients except flour and butter. Cover and cook on low 6\-7 hours. OR... place in a covered pot in the oven at 350F for 2 hours. In a small bowl, mix together the flour and butter. Gradually stir into stew until blended. Increase setting to high or return to oven. Cover and cook 30 minutes longer, stirring occasionally until thickened. 6 servings ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Layered Pumpkin Cheesecake source: Betty Crocker For the crust: 2 cups gingersnap cookie crumbs 1/4 cup butter or margarine, melted For the filling: 4 pkgs. 8 oz. each cream cheese, softened 1 1/2 cups sugar 4 eggs 1 cup canned pumkin not pumpkin pie mix 1 1/2 tsp. ground ginger 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg Heat your oven to 300 degrees. Grease a 9 inch springform pan with shortening or cooking spray. Wrap foil around the pan to catch drips. In a small bowl, mix cookie crumbs and butter. Press crumb mixture in bottom and 1 inch up sides of pan. Bake 8 to 10 minutes, or till set. Cool 5 minutes. In a large bowl, beat cream cheese with mixer on medium speed just till smooth and creamy, do not overbeat. On low speed, gradually beat in sugar. On low speed, beat in eggs, one at a time, just till blended. Spoon 3 cups of cream cheese mixture into pan over crust. Spread evenly. Stir pumpkin, ginger, cinnamon, and nutmeg into remaining cream cheese mixture; mix with wire whisk until smooth.Spoon over top of mixture in pan. Bake 1 hour and 25 minutes to 1 and a half hours or till edges are set but the center jiggles slightly when moved. Turn off oven; open door at least 4 inches. Leave cheesecake in oven for 30 minutes longer. Remove from oven; place on wire rack to cool. Without releasing side of pan, run a knife around the edge of pan to loosen the cheesecake. Cool in pan on wire rack 30 minutes. Cover loosely, refrigerate at least 6 hours but no longer than 24 hours. Run knife around edge of pan to loosen cheesecake again, carefully remove side of pan. I agree, Carol, roasting the pumpkin and then pureeing it makes a bit dryer puree. I use the recipe from the Libby's pumpkin can, my family likes it a lot, and I've used canned pumpkin and I've used fresh pumpkin. The quality depends on the pumpkins themselves, if they are fresh, some are good years and others are not, weather is that factor that cannot be controlled for the most part. When I use fresh pumpkin I measure 2 scant cups full. Libby's Famous Pumpkin Pie 3/4 cup granulated sugar 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 2 large eggs 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin 1 can (12 fl. oz.) Evaporated Milk 1 unbaked 9-inch (4-cup volume) deep-dish pie shell Whipped cream (optional) MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. POUR into pie shell. BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. This morning, I made a sweet potato hash with bacon and eggs, loosely based on the recipe below. Not only did I scale the recipe down to serve 2, I used bacon instead of sausage, and I made major changes in the cooking methods. My changes: Caramelize the onions on a low-ish heat with butter. Then dice the potatoes and mix them with the ingredients called for in the original recipe. However, instead of baking in the oven, put the sweet potatoes in the skillet with the onions, cooking the sweet potatoes on medium low heat until they are soft and lightly browned. Cut the cooked bacon into 1 inch pieces and add to the skillet with the sweet potatoes and onions. Make wells in the hash. Crack an egg into each well. Bake at 350 degrees until the eggs are set to your liking (we like ours totally done, so I baked for 15 minutes). I did not add the cheese, only because I forgot. This is definitely a keeper! Sweet Potato Hash with Caramelized Onions, Sausage & Eggs serves 8 2 pounds onions, about 2 large 1 tablespoon unsalted butter Table salt 1 pound fresh Italian sausage or chorizo 3 pounds sweet potatoes, about 3 large potatoes, ideally organic 6 large garlic cloves 4 long stalks rosemary, about 1/4 cup of leaves 3 tablespoons olive oil 1 tablespoon kosher salt, plus more to taste if necessary Freshly ground black pepper To serve: Large eggs Kosher salt and freshly ground black pepper Parmesan cheese, to serve To make the hash: Heat the oven to 450 degrees F. Peel the onions and cut them in half lengthwise, then cut them into thin half-moons. Cut the half-moons in half. Melt the butter in a skillet over medium-high heat. When it foams up add the onions and sprinkle lightly with salt. (Don't worry if they are crammed into the pan; they will rapidly cook down.) Lower the heat slightly and cook the onions for about 30 minutes, stirring occasionally, and lowering the heat if they seem to be burning. Cook them until they are very dark brown. Meanwhile, put the sausage in another skillet and brown over medium-high heat, chopping it up into fine crumbles with a spatula. Cook the sausage for at least 15 minutes, or until it is cooked through and quite crispy. Drain away any excess fat. While the onions and sausage are cooking, chop the unpeeled sweet potatoes into cubes that are about 1/2-inch to a side. Finely mince the garlic and rosemary leaves, and toss them in a large bowl with the sweet potatoes. Toss with the olive oil, kosher salt, and a generous helping of black pepper. When the onions are dark brown and the sausage is crispy, stir these into the sweet potatoes as well. Line a large baking sheet with foil or parchment paper, and spread out the sweet potatoes evenly. Roast the sweet potatoes for 30 to 45 minutes (roasting time depends on the size and uniformity of the sweet potato chunks, as well as the variety of sweet potato you buy) or until they are soft and browned. Refrigerate the cooled hash for up to 5 days. To serve: Heat the oven to 425 degrees F. Spread a relatively thin layer of the (already cooked) sweet potato hash in a baking dish, such as a cast iron skillet or a 9x13-inch baking dish. You can also bake in individual ramekins. Make small wells in the sweet potatoes and crack in large eggs. Sprinkle lightly with salt and pepper. Bake for 15 to 20 minutes, or until the sweet potatoes are hot and the eggs are baked through. (Test the eggs by prodding them with a fork to check the firmness of the white and the yolk; baked eggs are deceptive in that the white often looks much less cooked than it really is.) Serve immediately, with shavings or sprinkles of Parmesan cheese, if desired. Mix sugar, oil and eggs together, add pumpkin and vanilla. Set aside. Combine flour, salt, cinnamon, nutmeg, and baking soda. Blend into sugar mixture alternately with water. Bake at 350 for 1 hour if using large loaf pans, or for 50 minutes if using smaller loaf pans. Spray pans with Butter flavoured Pam. NOTE: The original recipe called for nuts (pecans or walnuts) which I used. Then I tried it with both nuts and chocolate chips, before settling on just chocolate chips. I use two bags of good quality chocolate chips. Spread onto well greased and floured 15 X 10 X 1 inch jellyroll pan. Top with nuts. Bake at 375 degree for 15 minutes. While hot , turn cake onto a pastry cloth sprinkled with powdered sugar. Roll in pastry cloth and let cool. Beat together filling ingredients. Unroll cake, remove cloth and spread filling on cake. Roll filling inside cake. Let stand until cold. Position rack in lowest third of oven and preheat to 400°F. Roll pie crust disk out on lightly floured surface to 13-inch-diameter round (about 1/8 inch thick). Roll up dough on rolling pin and transfer to 9-inch-diameter glass pie plate. Gently press into place. Trim edges of crust, leaving 1/2-inch overhang. Fold excess under. Crimp edges. Freeze until crust is firm, about 15 minutes. Line pie crust with foil, leaving 3-inch overhang. Fill foil with beans or pie weights. Fold extra foil gently over crust edges. Bake until crust is set, about 15 minutes. Remove foil and beans. Cool pie crust slightly. Reduce oven temperature to 350°F. Whisk all remaining ingredients (except Maple Whipped Cream) to blend in bowl. Pour filling into crust.
