I forgot the Pineapple Casserole recipe..............

OH MY GOSH!!!! It is heaven..of course it has been posted here at the kt for years...I saved it would never try it...finally did and now I wish I hadn't...I just made the single recipe...and for christmas I will make like a 5X recipe...it was a hit...Thanks Glenda! STacy

I can honestly say I could kick myself for not trying this earlier Glenda...what was I thinking? Every recipe of yours I have tried had turned out and been to die for....dumb me.....Stacy

Some reasons why your cheese did not melt: 1. Used pre-grated (it has potato starch in it) 2. If you made casserole the nite before and grated your own cheese, you need to set it on the counter, the day you are cooking, for it to warm up some from being in refrigerator. And it DOES take longer for it cook then. 3. If you are baking with another dish, it takes longer. Been making this casserole at least twice a year, for 20 plus years and no one time has it failed, EXCEPT when I wanted to shortcut and use the packaged pregrated. I use Kraft cheese blocks and the other day Borden's cheese block. And grate it in the food processor! And last but least NEVER the Velveeta in the block!

Pineapple Casserole-Miss GlendaÂs 1 (20-ounce) can pineapple chunks in juice 1/2 cup sugar 3 tablespoons all-purpose flour 1 cup shredded cheddar cheese DO NOT USE PRESHREDDED, grate your own. PRESHREDDED does not work with the pineapple 1/2 cup butter or margarine, melted 1 stack Ritz crackers, crushed Drain pineapple, save 3 tablespoon of juice. Combine sugar and flour; add cheese, pineapple and pineapple juice. Mix well. Put in greased 8 x 8-inch baking dish. Mix crushed crackers and melted butter together; sprinkle over pineapple mixture. Bake for 30 minutes at 350*F or until browned and bubbly Serves 6.

I reckon this is one of those "secret" recipes that have been shared around for a long time. I first learned it at a duck hunting camp in Stuttgart, Arkansas, quite a few years back, and have been making it ever since. Everyone we serve it to for the first time is enthused, and has to have the recipe. I've made it with Ritz, with Saltines (which is how I learned it), and with wheat crackers. It's all good. And, like Glenda, I usually double it.

This is one from my blog that I've made twice (if I make something more than once, that means I REALLY liked it.) Chicken-and-Rice Bake 3 to 4 boneless chicken breasts halves, rinsed and patted dry 1 Â½ cups chicken broth I used low-sodium Â½ teaspoon seasoned salt dash ground black pepper 4 tablespoons butter Â½ cup chopped celery 1 medium onion, chopped 4 tablespoons all-purpose flour 1 cup milk salt and pepper to taste 2 Â½ cups cooked rice (I used brown rice, over 3 cups - I didn't measure) 1 cup fresh bread crumbs (I used whole-grain white bread) 2 tablespoons melted butter 1. Place the chicken breasts in a saucepan with the chicken broth, seasoned salt, and a dash of pepper. Bring to a boil; reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, until cooked through. With a slotted spoon, remove the chicken breasts to a plate. Cover loosely with foil and let cool. 2. Heat oven to 350 degrees. 3. Strain the broth into a large cup or small bowl; set aside. In the same saucepan, melt the butter. Over medium-low heat, sautÃ© the chopped celery and onion until tender. Stir in the flour until well blended. Gradually stir in the reserved chicken broth and milk. Cook the sauce, stirring constantly, until thickened and bubbly. Taste and add salt and pepper, as needed. 4. Chop the cooled chicken into bite-size pieces. Add the chicken to the sauce mixture along with the cooked rice. Spoon the chicken and rice mixture into a 2-quart casserole dish. 5. Toss bread crumbs with melted butter; sprinkle over the casserole. Bake for 30 to 40 minutes, or until hot and bubbly, and bread crumbs are lightly browned. Here's one from Paula Deen

Pineapple Casserole

Servings: 8
Cooking Time: 30 Minutes

Ingredients:
1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar cheese
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs (recommended: Ritz)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Steps:
Preheat the oven to 350 degrees F. Grease a two-quart casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended or combine in food processor. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

I alway double, and have even tripled!

GLENDA'S PINEAPPLE CASSEROLE
1-20oz. can pineapple chunks
1/2 cup sugar
3 Tablespoons flour
l cup shredded cheddar cheese
1/4 cup butter melted
1/2 cup Ritz crackers or cracker that is like Ritz
Drain pineapple reserving 3 Tablespoons of juice. Combine sugar, flour, and juice. Add cheese and pineapple chunks. Place in a 1 quart casserole dish. Mix cracker crumbs and butter and pour over pineapple mixture. Cook 350 degrees for 20 minutes or until golden brown.
Glenda said to shred your own cheddar cheese, she found pre-shredded didn't melt/blend as well. You may double the recipe.

Thank you both..I think I'll make it tomorrow..I even have all the ingredients..that's a first..I hope it turns out as good as the Yam puff I made for Thanksgiving. That was a big hit..
