I forgot the Pineapple Casserole recipe..............

OH MY GOSH!!!! It is heaven..of course it has been posted here at the kt for years...I saved it would never try it...finally did and now I wish I hadn't...I just made the single recipe...and for christmas I will make like a 5X recipe...it was a hit...Thanks Glenda! STacy

First tried it with a recipe book that DS gave me from company he worked for.

I can honestly say I could kick myself for not trying this earlier Glenda...what was I thinking? Every recipe of yours I have tried had turned out and been to die for....dumb me.....Stacy

This is one of those "no recipe" dishes. It's something you can't really mess up. I always cook the meat first and get rid of the grease. I often will use sausage instead of hamburger or a mixture. I prefer my vegetable on the side but sometimes mix it in. Not a green bean fan so the "traditional" method is modified here. I too am not a mushroom fan so I use other cream soups, whatever I have. Cream of potato is great, celery, chicken, like I said, whatever I have. Sometimes I'll put in a can/jar of gravy instead of the cream soup if I'm tired of cream soups. Sometimes I'll use canned potatoes, fresh ones or whatever frozen potatoes I have. Large diced potatoes work great. After all, it's meat, potatoes, and a veg. How do you mess it up? It's GOT to be good! I'm moderate with seasonings these days, but I like some Louisiana Hot Sauce in it, garlic salt, onion, and if I'm short on hamburger or something I'll cut up some smokey hot dogs, use some frozen meatballs or something to put in for added meat. Depending on the flavor I desire, I might add some Worstechire sauce, Teriyaki, steak sauce or something too. I cook mine covered to get the potatoes cooked through, then turn up the oven a bit, pull the foil off and brown it up so the top is crisp. Ir reheats well either in the microwave, stove or oven although sometimes I do need to add a little water to steam it a bit to get a good reheat and then it's like when it was first made. In Minnesota, it's a "hotdish". And Tater Tot Hotdish is popular and simple. This is something that everyone should be able to make. It's really not difficult and truly is no-fail. Want more meat? Fine. Want more potatoes? No problem. Want more veggies? Go for it. No onion? Lots of onion? Half the pan with onion and veggies and the other half without? Simple. Few dishes are so simple and fool proof.

Here it is: and make it nite before, BUT BE SURE AND TAKE IT OUT A WHILE BEFORE BAKING THE NEXT DAY> Then top with cracker crumbs. I mix the cracker crumbs with butter in a plastic bag, as well, an put in refrig. Be sure and grate your own cheese. And double recipe! Pineapple Casserole 1 20 oz can pineapple chunks, drain, and reserve juice 3 Tbsp flour 1/4 cup melted butter 1/2 cup sugar 1 cup grated cheddar cheese (grate your own) Pre grated cheese doesn't melt 1/2 cup crushed Ritz crackers **I always use saltines Preheat oven to 350 Combine flour, sugar and 3 Tbsp pineapple juice. Stir in cheese and pineapple. Spoon into greased casserole dish. Mix crackers with butter, and add to top of mixture. Bake 25 minutes or until bubbly.

Not to take away from Glenda at all - this recipe s quite different. My Mother gave me this recipe years ago - super easy & wonderful for either dinner or brunch: Pineapple Dressing 1/2 cup butter (I have used margarine & "spreads") 1 cup sugar 4 eggs 1 cup crushed pineapple, drained 5 slices white bread, sliced (I have used wheat & other) Cream butter and sugar, add eggs one at a time. Add in pineapple. Fold in bread. Put in a greased 1 quart casserole dish (I use non-stick spray). Bake at 350 degrees for 1 hour.

You must have been posting this as I was posting the recipe on your other post! Here it is again, Dearie. Pineapple Casserole-Miss GlendaÂs 1 (20-ounce) can pineapple chunks in juice 1/2 cup sugar 3 tablespoons all-purpose flour 1 cup shredded cheddar cheese DO NOT USE PRESHREDDED, grate your own. PRESHREDDED does not work with the pineapple 1/2 cup butter or margarine, melted 1 stack Ritz crackers, crushed Drain pineapple, save 3 tablespoon of juice. Combine sugar and flour; add cheese, pineapple and pineapple juice. Mix well. Put in greased 8 x 8-inch baking dish. Mix crushed crackers and melted butter together; sprinkle over pineapple mixture. Bake for 30 minutes at 350*F or until browned and bubbly Serves 6.

Here's one from Paula Deen

Pineapple Casserole

Servings: 8
Cooking Time: 30 Minutes

Ingredients:
1 cup sugar
6 tablespoons all-purpose flour
2 cups grated sharp cheddar cheese
2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
1 cup cracker crumbs (recommended: Ritz)
8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Steps:
Preheat the oven to 350 degrees F. Grease a two-quart casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended or combine in food processor. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

I alway double, and have even tripled!

GLENDA'S PINEAPPLE CASSEROLE
1-20oz. can pineapple chunks
1/2 cup sugar
3 Tablespoons flour
l cup shredded cheddar cheese
1/4 cup butter melted
1/2 cup Ritz crackers or cracker that is like Ritz
Drain pineapple reserving 3 Tablespoons of juice. Combine sugar, flour, and juice. Add cheese and pineapple chunks. Place in a 1 quart casserole dish. Mix cracker crumbs and butter and pour over pineapple mixture. Cook 350 degrees for 20 minutes or until golden brown.
Glenda said to shred your own cheddar cheese, she found pre-shredded didn't melt/blend as well. You may double the recipe.

Thank you both..I think I'll make it tomorrow..I even have all the ingredients..that's a first..I hope it turns out as good as the Yam puff I made for Thanksgiving. That was a big hit..
