Taking luckygardnr's place for two days.

So how about sharing your favorite?

Here's my favorite of salads. Franklin Gourmet, here, created the recipe. I, in fact, had it for lunch yesterday.

AND the nuts alone are terrific!

Baby Blue Salad

Â¾ pound mixed salad greens

Balsamic Vinaigrette

4 ounces gorgonzola cheese

2 oranges, peeled and cut into thin slices

1 pint strawberries, sliced

Sweet and Spicy Pecans

Toss greens with Balsamic Vinaigrette and gorgonzola cheese. Place on six individual plates. Arrange orange slices over greens; sprinkle with strawberries and top with pecans.

Balsamic Vinaigrette:

Â½ cup balsamic vinegar

3 tablespoons Dijon mustard

3 tablespoons honey

2 garlic cloves, minced

2 small shallots, minced

Â¼ teaspoon salt and pepper, each

1 cup olive oil.

Whisk together first seven ingredients until blended. Gradually whisk in olive oil.

Sweet and Spicy Pecans:

Â¼ cup sugar

1 cup warm water

1 cup pecan halves

2 tablespoons sugar

1 tablespoon chili powder

1/8 teaspoon ground red pepper

Stir together Â¼ cup sugar and 1 cup warm water until sugar dissolves. Add pecan halves and soak 10 minutes. Drain, discarding sugar water.

Combine remaining spices and add pecans, tossing to coat. Place on lightly greased baking sheet and bake 350 for 10 minutes, stirring once.

CHEESE AND PEA SALAD
1 pkg. (10 oz.) frozen green peas
2 green onions chopped fine
1 c. diced mild Cheddar cheese (about 4 oz.)
2 lg. stalks celery, chopped
1/2 c. mayonnaise or salad dressing
1/4 tsp. Salt
1 diced hard boiled egg

Rinse frozen peas under running cold water to separate; drain. Toss all ingredients in with mayonnaise.

BOK CHOY SALAD

1 head of bok choy (or substitute 1 bag of cole slaw mix)
6 green onions
3/4 c sunflower seeds
1/2 c slivered almonds
2 packages of ramen noodles, discard seasoning
3-4 T butter
For dressing...
3/4 c oil
1/4 c soy sauce
3/4 c sugar
1/3 c vinegar

Smash ramen noodles and brown in frying pan with butter. Let cool. In a large bowl, combine all ingredients for dressing and mix well. Set aside. Chop bok choy using stalks and a portion of the green leaf. Chop green onions using as much of the green stalk as you like. Combine boy choy (or cole slaw mix) and green onions with dressing. Toss to coat vegetables. Just before serving add sunflower seeds, almonds and browned ramen noodles. Store any leftovers in the fridge.

A different twist... add the ramen noodles to the bok choy mix and let it marinate for a couple of hours in the fridge before serving. Then, add in the sunflower seeds and almonds before serving.

My favorite salad, created by local restauranteer, Franklin's Homewood Gourmet! Baby blue salad 1 pound baby lettuce mix 6 ounces blue cheese, crumbled 2 cups balsamic vinaigrette (recipe below) 4 oranges, peel removed, cut to the flesh and sliced (2 slices per salad) 2 pints strawberries, hulled and quartered (2 tablespoons per salad) 6 ounces "Sweet and Spicy" pecans (recipe below) Toss baby lettuce mix with balsamic vinaigrette and blue cheese, using enough dressing to coat - but not drown - lettuce. Place in center of plate. Scatter oranges and strawberries over the salad. Top with sweet and spicy pecans. Serves 12. Balsamic Vinaigrette (According to the original recipe, this is for 12 salads. I had 3/4 of a jar left after serving a group according to the recipe, so you may want to reduce the amount if you do not want extra vinaigrette on hand.) 1 cup balsamic vinegar 1/3 cup dijon mustard 1/3 cup honey 2 tablespoons roasted garlic, chopped 2 teaspoons shallots, chopped 2 cups extra virgin olive oil Salt and pepper Whisk vinegar, honey, Dijon mustard, garlic and shallots together until combined. Slowly add oil while continuing to whisk dressing. Add salt and pepper to taste. "Sweet and Spicy" Pecans 4 tablespoons white sugar 2 tablespoons chili powder 1/4 teaspoon ground cayenne pepper 2 cups water 1/2 cup white sugar, mixed with water to make a syrup 6 ounces pecans, whole Mix sugar and spices together and set aside. Briefly soak the pecans in the sugar mixture, drain lightly and toss nuts with spice/sugar mix to coat. Place in a single layer on a roasting pan and roast for 10 minutes at 350 degrees until golden brown.

Thank you for replying, I wasn't going to come back into the topic but it's been bothering me all day because all I did was jokingly say "Ick" to a food I don't like. What I notice here is that others have made rude comments about Miracle Whip, a food *I* use, but were they called out on their "rudeness" to me? No. Why is it ALWAYS me, especially when I go out of my way to let you all know I'm laughing, just as I would if you were sitting before me. I'm not laughig AT you, I'm laughing at an ingredient in food! I have to disagree with you about people adding the ingredients that I specifically asked NOT to be added. Just as everyone goes into other's topics and apologizes for "hijacking" it, this was MY topic, and MY question. I'm not saying this to be mean, but I was the one who wanted some recipes which do not use fruits and nuts. Unless it was a fruit salad. :) So yes, when I get a reply I expect it to be for ME, and others are more than welcome to chime in. It's no different than if you did a topic on the other forum asking for painting advice on any color EXCEPT black, and everyone replied showing you their black rooms. lol. So I don't see how it was wrong for me to RME when I got the recipes with fruits and nuts. When we do a topic asking a specific question, should others reply for the sake of themselves, or to answer the OP's question? Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

I typically do make a cucumber feta salad, and I add cherry tomatoes for mine and leave them out for Kevin. I guess I missed Grainlady's recipe because it was grayed out. Her recipe is similar to mine except that I add fresh dill to mine (I have plenty in the back yard) and use red onions instead of green onions. I have plenty of chives in my yard also, and so I might add some of those. It's getting to the time of year when I have to move the dill to shadier parts of the yard so that it will not go to flower so quickly. The same is true for parsley and cilantro, although cilantro can handle the sun better.

This one is always a huge hit when we go boating. Travels well, very tasty , substantial and a bit different. Don't let the ingredients list put you off it really is very easy to make. Real N'awlins Muffuletta (Weed) 1 cup pimento-stuffed green olives crushed 1/2 Cup drained kalamata olives crushed 2 Clove garlic minced 1/4 Cup roughly chopped pickled cauliflower florets 2 Tbl drained capers 1 Tbl chopped celery 1 Tbl chopped carrot 1/2 Cup pepperoncini drained 1/4 Cup marinated cocktail onions 1/2 Tsp celery seed 1 Tsp dried oregano 1 Tsp dried basil 3/4 Tsp ground black pepper 1/4 Cup red wine vinegar 1/2 Cup olive oil 1/4 Cup canola oil 2 (1 pound) loaves Italian bread 8 ounces thinly sliced Genoa salami 8 ounces thinly sliced cooked ham 8 ounces sliced mortadella orcappicola 8 ounces sliced mozzarella cheese 8 ounces sliced provolone cheese Directions 1. To Make Olive Salad: In a medium bowl, combine the green olives, kalamata olives, garlic, cauliflower, capers, celery, carrot, pepperoncini, cocktail onions, celery seed, oregano, basil, black pepper, vinegar, olive oil and canola oil. Mix together and transfer mixture into a glass jar (or other nonreactive container). If needed, pour in more oil to cover. Cover jar or container and refrigerate at least overnight. 2. To Make Sandwiches: Cut loaves of bread in half horizontally; hollow out some of the excess bread to make room for filling. Spread each piece of bread with equal amounts olive salad, including oil. Layer 'bottom half' of each loaf with 1/2 of the salami, ham, mortadella ,mozzarella and Provolone. Replace 'top half' on each loaf and cut sandwich into quarters. 3 Serve immediately, or wrap tightly and refrigerate for a few hours; this will allow for the flavors to mingle and the olive salad to soak into the bread.

bean and corn salad

2 cans green beans, 4 cans of colorful beans or 2 cans green beans, 2 other kinds, 2 cans of corn, drained
1 bottle of Fat Free Italian dressing
a little sugar or sweetener to taste
Drain beans add dressing and toss. Sweeten to taste (2 tablespoons sugar or equiv. worked fine for me) Refrigerate overnight.
This is wonderful! I had a potluck and left a bowl behind and a lady walked in and said if no one is taking that - it is mine!

I make an initation Panera Bread salad. Any greens, with strawberries, blueberries, drained Mandarin oranges (No nuts) . Dress with raspberry vinegraitte.

This is a favorite at our house.

Napa Salad

Ingredients:
1 large head of Napa cabbage washed and shredded
2 packages of Ramen Noodles crushed and uncooked (discard flavor packet*)
1/2 cup slivered almonds
1/2 cup butter (1 stick)
1/2 tsp sesame oil or roasted peanut oil (optional)
1/2 cup vegetable oil
1/2 cup seasoned rice wine vinegar
1/2 cup sugar
2 Tbsp soy sauce
Instructions:
In a large pan sautee Ramen Noodles, almonds and butter until lightly browned.
Mix oil, vinegar, soy sauce and sugar to make dressing.
20 minutes before serving, mix cabbage dressing and noodle mixture together and toss.
*We buy the Chicken flavored Ramen Noodles and add the flavoring packet to our rice on Chinese night.

This is a new one for us. I've made it twice since I found the recipe.

WALDORF SALAD WITH PEANUT DRESSING

2 c. diced slightly tart apples, unpeeled (I used Gala)
1/3 c. raisins
1/2 c. diced celery
1/2 c. chopped salted peanuts

Dressing:

1/4 c. creamy peanut butter
1/4 c. honey
1/4 c. mayonnaise
1 or 2 tsps. lemon juice (optional, add if using sweeter apples)

Toss together apples, raisins, celery and peanuts. Mix dressing ingredients together and toss with apple mixture. Serve on a bed of lettuce.

Corn bread salad
Box of Jiffy cornbread mix, baked-cooled and crumbled into bowl.Dice small green and red pepper,tomato and onion.
Mix Â¾ c sour cream and Â¾ c Hellman's mayo. Add Â½ pkg of hidden valley ranch dip and some bacon bits. Mix all together and Top with Â¾ c. shredded cheese. Refrigerate over night. Good

I've posted this before, but it is one of my favorites and quick and easy.

Shrimp cole slaw

Shred cabbage. I do mine by hand by slicing very, very thinly.

Shredded carrot for color

Chopped purple or green onions

Boiled shrimp

Toss together with mayonnaise thinned with Zesty Italian dressing. You can add some garlic powder and/or white pepper if you wish.

This was a house favorite at a local seafood restaurant, long ago gone out of business. Small shrimp are good but I
use large shrimp and cut them in pieces. You can also use crab if you don't want to use shrimp.

Patches....I've had the Cornbread Salad....a dear neighbor (who sadly has passed away) made some and brought some over for me and DH to taste. It was one of the best, if not the very best salad I've ever tasted. I've never, ever made any......

I love that cornbread salad, too, but have never had it w/ cheese. One of our popular lady type lunch places has it on their buffet and it's very popular. I can't imagine how it tastes w/ cheese!! A new approach!
