I love my basil!! I want every kind! do you have a basil? I want that one too! I love using it with bruschetta, I love it in salads, layered on a sandwich instead of lettuce, I love munching on it when I'm in my garden, I love using it instead of spinach, wilted in a skillet in a buttery sauce. I had thousands of basil seedlings earlier this year! Then, because our winter was not so wintery, came the bugs, and the slugs, and the snails,... and my roommate's new 25 pound "puppy." I have lost entire patches of basil. I hover protectively over the remainders when I am outside. I find myself pondering whether this seedling has been attacked again, or if it was eaten so much yesterday. Is that new digging spot a roaming cat, a gopher, or that blasted PUPPY!? I am le sad :( *sigh* srsly, dog, there's some greenbriar over there that you could try chewing on *chuckle*.

Fresh ginger is also my favorite, and I use it in both sweet and savory dishes. About the only other spice I use in both is cardamom - I do not like nutmeg or cinnamon in savory dishes although I like both of them in sweet dishes. I used to make my on Thai curry paste because the ones I could buy had cinnamon in them, but now I can find commercial Thai curry paste that does not have cinnamon. I can tolerate a small amount of cinnamon in Indian food, but that's as far as it goes. For just savory dishes, Sumac is probably my favorite. I use a fair amount of coriander, which I harvest from cilantro plants that I allow to go to seed. I end up with tons of it because I use so much cilantro, but lately I have been using quite a bit of it in making pickles. This time of year I have to have nutmeg for my eggnog. Lars

Oh, thanks Dishes! That's great! It means I can get everything I need there now except the Greek, and I'm pretty sure I can make a decent replica of that myself. Cinnamon - I can't say one is "better" than the other, but they are very different. The Ceylon is mor delicate and bright and traditional to European baking. It has an almost citrus note to it. The Korintje isn't a "true" cinnamon, but a cassia. It's what we're most used to here in the US - a little stronger with a bitterish edge to it. The Vietnamese "cinnamon" (Also a cassia) is extremely aromatic and has a stronger flavor and a bit of sweet heat to it (think heat as in the way ginger has heat, not like jalapeno). Personally, I really like the Vietnamese best, but sometimes I will mix it with the Ceylon. Depends on what I'm making with it. If it were me? I'd get small jars of each and play around with them.

I just put my user name in search and it came back "There were no matches". I just posted last week or the week before about favorite spice or herb smell. Sniff, I am history, gone, poof, vanished never existed. So long cruel world. Maybe I am being a little over dramatic! I just picked a couple large bunches of sage to dry for dressing this winter. I love that smell.

I love the smell of cloves, but hate the taste.

Rosemary. I simply can not walk by a rosemary plant without brushing my hands across it, and smelling it. YUMMY!

Basil and lemon balm come in second and third.

Yes, I have all them in my yard here. ;)

Right now I have a small glass container with pewter type open lid for potpourri that I put cloves in. It gives off a nice, but not strong scent you notice while walking by, it's on a table in the living room.

I also like vanilla.

Me too, rosemary. I like it so much I tend to put the herb in some things it should not go into, according to conventional wisdom, but it usually turns out alright. My absolutely favorite herb..wish I could grow it. If there were a rosemary scented perfume, I would probably wear it!
