I just chop it up, put it in a freezer bag and throw it in the freezer. Probably not the "correct" way but works for me.

When my celery starts getting limp, I chop it up and put it into small snack size ziplocs then top them with water. I freeze these and use them in soups and any type of cooking where the excess water is not a problem.

Also, when I trim a new bunch to fit it into my tupperware keeper, I always save the tops of the celery stalks with all those great flavorful leaves.

I've never tried freezing it. I cut some up into small pieces and dehydrated it a couple of months ago. I added it for flavor to a whole chicken I was baking. It worked fine.

I do the same as Lindyluwho. Just chop them, bag them and freeze them. I use them when making soup or when making dressing ( stuffing ) to go with hen or turkey.

Dottie, If your grocery store has a salad bar, it might be more cost effective to buy some already sliced or chopped celery from there.
Instead of chives on baked or mashed potatoes I usually use green onions. I was buying a bunch and using what I needed. Usually the rest would go bad before I was ready to use it again. Now I get a couple of spoonsful of it from the salad bar and it is plenty. The green onions are lighter in weight than celery, but there have been a few times when it didn't weigh enough to register. If I have anything else from the salad bar I ask them to put it on the scales with the other product; if not I ask them if there is a minimum charge they could charge. This morning a young lady weighed it a couple of times and then put it with my groceries without ringing up anything. I had something else and asked her to put it with that. It only costs a penny or two that way. That's not why I buy it that way and would feel better if they would charge me a quarter or something like that, but I'm not going to force them.

Thanks all, When I buy celery the next time, I'll try freezing some in zip-lock bags. Mscippy, I thought of that but our local grocery store doesn't have a salad bar. I did check out the deli counter, but they didn't have anything like it.Dottie

My neighbor loves celery and I usually give her half of mine when I buy it. Usually that's enough for me.

I thougth I was the only one in the world to save the celery leaves! I've *never* met anyone else who does this! May I ask how you use them? I put them onto a paper-towel lined metal colander, and set it near the pilot light on my (very old) gas stove. After a day or two, the leaves are dried, and I store them in a glass jar to use in recipes. I was taught to do this from an elderly neighbor, back in the day. I love using up things that most people discard, makes me feel extra frugal!

I was also going to suggest the salad bar for small items.

Rachel Ray talks about using the celery leaves in stews and such.

Speaking of, sometimes I buy my DD 1 tea cookie at the grocery store. They are really small and sold by the pound. Well 1 is so light, it never registers any weight, so the cashier usually just throws it in the bag.

I am another one that keeps my celery tops and leaves when cleaning celery stalks. I just pop them in a ziploc bag and keep it in the freezer. I usually put them in a gallon bag and add to it. I use the leaves and tops if I am making stock or will crumple some of the frozen leaves in soups when I want some extra flavor.
