Recipe for Cheese Straws

1 2/3 cups unbleached all-purpose flour

1 1/4 teaspoons dry mustard

1 teaspoon salt

1/4 teaspoon cayenne pepper

1/2 pound extra-sharp Cheddar cheese, coarsely grated (2 1/2 cups)

1 stick (4 ounces) unsalted butter, at room temperature

2 tablespoons water

Directions

Sift the flour, mustard, salt and cayenne into a medium bowl. Using an electric mixer, beat the cheese and butter on low speed until well blended. Gradually beat in the flour until completely incorporated. Add the water and beat for 1 minute.

Turn the dough out onto a lightly floured surface and knead 5 times. On a large sheet of wax paper, roll the dough into a 12-by-9-inch rectangle. Slide the dough onto a cookie sheet and refrigerate until chilled, about 15 minutes.

Preheat the oven to 425Â. Cut the dough in half crosswise, then cut it into 6-by- 1/4 -inch strips. Transfer the strips to 2 cookie sheets. Bake 1 sheet at a time for about 14 minutes, or until the cheese straws are golden brown and crisp. Let cool slightly, then transfer to a rack to cool completely.

The Cheese Straws can be stored in an airtight container for up to 1 week.

These sound tasty! I have a son who loves super spicey things, I wonder if I could add dried red peppers to this and use whole wheat flour (he "tries" to be healthy)

I just throw all the ingredients in the food processor and in about a minute or two, the dough is made. I also make them into small balls and flatten them with the bottom of a glass for cheese cookies. Harry's niece caters and often serves them--it's a Southern thing--and she puts the dough in a cookie press and makes pretty little straws.

They are delicious no matter what the shape.

In all due respect, MsMito, I don't find that answer snippy. Unless her tone of voice was off? But it's likely she doesn't have an exact recipe, and just cobbles those ingredients together until it looks right. I mean, it does sound kind of simple. The only real question in my mind, without having seen the dish, is the proportion of ham to potato. The words "can" and "pkg" are a bit nebulous. And I think I'd use pepper jack to kick it up a little. But, really, you shouldn't have much trouble replicating it.

Here you go: Cheese Straws 1 (5 ounce) jar Kraft Olde English Cheese spread 2 sticks butter, softened (no substitute) 1-3/4 cups all-purpose flour cayenne pepper, to taste Preheat oven to 350Â° F. Cream cheese and butter until smooth and fluffy, add pepper, then mix in flour until well mixed. Line baking sheets with foil, first to save clean up and second, to cut down on breakage. On ungreased foil, pipe cheesestraws with star or basketweave tip onto foil into 3 inch strips and bake approximately 10-12 minutes or until edges are lightly browned.

I have made the first two recipes. The second one, my mother used to make that recipe all the time. And the last one I have had at a party. All three are great! Cheese Tea Biscuits 2 C. sharp cheese, grated 2 C. flour 2 C. rice cereal 2 sticks butter, softened 1/2 tsp. red pepper Preheat oven to 350 degrees F. Mix all ingredients together. Roll into a roll about 2-3 inches thick. Cover with plastic or aluminum foil and refrigerate until it becomes hard. Slice into thin tea biscuits. Bake in preheated oven on an ungreased cookie sheet for about 10 minutes. Do not cook until brown or they will be overdone. Makes about 36. Cheese Pennies Yield: 3 dozen 1/2 cup butter or margarine, at room temperature 1/2 pound grated sharp cheddar cheese, at room temperature 1 cup all-purpose flour 1/4 teaspoon salt 1/2 envelope dry onion soup mix cayenne pepper pecan halves optional Combine butter and cheese and mix well. Add rest of ingredients, except pepper and pecans. Add a few grains of cayenne pepper. Mix thoroughly. Divide into 4 pieces. Roll each into a cylinder (silver dollar size), wrap in foil and freeze. To serve, partially defrost roll, cut slices 1/4 inch thick, top with pecan halves if desired and bake on a greased cookie sheet at 400 degrees F for 8 to 10 minutes. Remove from pan while warm to prevent breaking. Cheese Walnut Wafers 4 oz cream cheese, softened 8 oz. blue cheese, crumbled 1/4 cup butter, softened 1 and 1/2 cups flour Pinch of salt 1 tsp. ground red pepper 2/3 cup walnuts, crushed 2 egg yolks, beaten Combine cheeses and butter and mix until blended. Slowly add flour and remaining ingredients until well blended. Shape into 2 log shapes and chill for at least 8 hours. Cut dough into 1/4-inch slices and bake for 12 minutes at 350 degrees on an ungreased baking sheet. ***I never rolled them into a log and refrigerated. I just pinched off amt the size of a walnut and rolled them in the palm of my hand, then pressed them with a fork to flaten OR flatten when a pecan/walnut halve.

I remember watching Ina (Barefoot Contessa) make hers, and she uses puff pastry. Cut in strips, sprinkled with cheese, garlic, etc and then twisted.

You can roll the dough in a cylinder shape and cut in slices like slice and bake cookies. Just slice very thinly and remove from oven before they get brown.

I used to make these:
CHEESE STRAWS

1 stick butter
2 c. grated sharp cheese
1 c. plain flour
1/8 tsp. cayenne pepper
1 c. Rice Krispies

Cream butter and cheese. Sift flour and cayenne pepper and add to cream mixture. Stir in Rice Krispies. Roll into balls, dip a fork into water and mash balls onto ungreased pan. Bake at 350 degrees for 15 to 20 minutes.

Mother's recipe:

Cheese Pennies
Yield: 3 dozen

1/2 cup butter or margarine, at room temperature
1/2 pound grated sharp cheddar cheese, at room temperature
1 cup all-purpose flour
1/4 teaspoon salt
1/2 envelope dry onion soup mix
cayenne pepper
pecan halves optional

Combine butter and cheese and mix well. Add rest of ingredients, except pepper and pecans. Add a few grains of cayenne pepper. Mix thoroughly. Divide into 4 pieces. Roll int o balls, press with fork and top with pecan halves if desired and bake on a greased cookie sheet at 400 degrees F for 8 to 10 minutes. Remove from pan while warm to prevent breaking

mamatoad, just wanted to tease you. No, they will not keep for a week in MY house. I can eat a whole batch at one sitting. Really good stuff.
