"Cute:" can get you in trouble

I posted this on another forum but thought I'd see what different responses I get at the Table.

When we were buying plants this spring, I bought a Japanese eggplant, just one, because I think they're "cute". We had never raised eggplant before, I had never cooked it and rarely ordered a dish out, with eggplant. Picked a couple, then a couple more, and made ratatouille a couple of times. Fast forward to today...I just picked a dozen. Now what? Fried? Don't need the grease. Baked fried? And there are more coming! Worse than zucchini, which you can at least use for all sorts of things, although we don't grow it.

So on to the next abundance...jalapeno peppers, there are dozens, and cherry tomatoes, but more of some that are a little larger. I've put a bunch of them in the freezer, whole, just washed and dried, and my freezer space is full.

I need help.LOL
