2cm or 3cm for Quartz

I'm having Zodiaq installed and I have a section about 18" by 21" that is like a overhang/peninsula at the end of one counter. I'm being told by the fabricator that I'll need plywood under the 3cm slab in that area, despite having some cleats and a post under there for support.

Now my GC is asking me to debate having 2 cm with plywood underneath vs. 3cm because he says the plywood under 3cm in the peninsula area will show through. I can't figure out whether the 2cm all through the kitchen would be fine. Will the seam be visible for the edging?
