Countertops...how do you mix and match?

I know we've asked this question before, but when you have different countertops...do you keep all the perimeter ones the same and do a contrasting island? Or maybe two different surfaces (marble/wood) on the island? Or does anyone have different surfaces on the perimeter countertops?

Recently, I've been rethinking my formal dining room, which means the kitchen would have to change, too. This would give me the chance to have a dedicated baking area and still have a small island/work table.

I might include a prep sink in the baking area...so also just double checking which would be better around hard water (we have a well) marble or wood, or neither. Thanks in advance and please feel free to post pictures, if you like :)
