Extra thick quartz or marble countertop question -

I love the look of extra thick countertops - 2.5" thick or so, but have no idea how they're constructed.

Our kitchen will have concrete countertops around the edges, and a marble center island. Our bathrooms will likely have quartz composite countertops (Silestone/Caesarstone/etc). The concrete is relatively easy - just pour to whatever thickness we'd like. In mentioning this to our potential contractor, however, he mentioned that the way to create thicker marble or granite countertops is to essentially glue two slabs together.

This might be normal - I guess I just assumed that I'd find someone who'd special order an extra thick slab for me - is the actual solution as simple as buying two slabs? If so, how does the edge look solid and not disjointed? All edges will be square, no fancy edges.
