The more restrictive specifications rule. If you want the hood insert at 24", then you need to find a cooktop or range that allows that clearance. Retailers often display fantasy installations that do not work in real life. It is your red tag from the inspector at stake. There's nothing like having to completely redesign a space in the middle of a remodel that should have been designed to comply from the beginning. And that includes making no sure that the hood is wider than the range below if using deeper than 13" cabinets. IKEA wall cabinets are all 15" deep, and will not work with a 30" insert.

Cpartist makes a good point, I think, about any Wolf appliance looking more modern than a house otherwise restored/renovated to a century old appearance. One question, though. When you spoke of "the more modern looking induction cook top," did you mean "stovetop" (i.e, you are looking at one of the 36" Wolf induction ranges) or did you mean you are considering a separate 36" induction cooktop with a separate wall oven or ovens? If your carriage house kitchen has the space for a separate cooktop and oven(s), then it seems to me that the induction would be less jarringly obvious than the big DF or induction range would be. As an aside, if you have not already done so, you might want to look into the ongoing issue with the flaking cobalt blue oven linings that sometimes happens with Wolf's electric ovens including those in the dual fuel and induction ranges. Might or might not deter you, but worth looking into if you were not already aware of that ongoing controversy.

@itsourcasa yes we did purchase the Verona Induction. We've been using it for a few months and absolutely love it. Easy to use. And it is even so much faster and powerful than our vintage gas range which was really great. We don't miss the gas "power" at all - there is plenty of power with induction. Plus the clean up is so easy. No burners to clean out the spills.

LindaLinda2 I only posted that info because many people (myself included) have had no idea of the health issues with gas stoves. I realize you were semi joking about not being dead because I’m assuming you’ve used a gas stove for a long time. The problem is, the stoves maybe won’t kill you, but are they worth it if they “just” make you a little more unhealthy as each year goes by? There are many products that have caused health problems decades after using that nobody knew about at the time. Then it’s all “oh geez, I wish I’d know about the health risks back then. I would have stopped using (whatever).” Asbestos, cigarettes, sunbathing, talc, the list is long.
