This is DS's second restaurant at which he specializes in charcuterie (at least!). Neat :). More details please.....

David Chang's right hand woman is from Auburn and was coming for the game. He said he is a fan too ! They were coming to town for the game. When she started checking on places to eat she saw all the write ups about the new restaurant Acre. It opened in Sept. They had a table for 11.

DS1 was in VA and the fellow on the left in the pick is the owner/chef of this new place. He and my DS have known each other for years. He talked DS into coming back here and promised him that he could work solely on the charcuterie. DS didn't want to do all the other chef things. So far it is working out pretty well. Since the place is so new and DS is officially listed as the chef de cuisine, he does have other duties. No one thought that they would be as crazy busy as they have been . 300 many nights and not just weekends with football !

DS has had a growing interest in butchering and charcuterie and at some point will hopefully have a place devoted to just that. Always new things on the horizon. Keep watching old bat :) Thank you ! c

Well, I think we all know where DS1 got his interest in cooking. I always enjoy your KAW posts. Congrats, trailrunner, you must be so proud of him.

Does DS1 have a fail safe recipe for roast pork belly? It's my new fav at a local tapas restaurant, but they won't give up their recipe (oh, (hand waving) just brine and roast...).

I just tracked down the online menu for the restaurant (linking). Wow, prices seem quite reasonable! Why on earth can't I have a restaurant like that close by.... I'd come in week after week :)

ml..thank you .,,,we don't have a tv so I have never seen the show . But I shall pass it along to my DS...although has no TV either ! DS said he was impressed with how very nice David is. He sure seemed cheerful and very engaged with the Chefs and the other guests. c
