Some of these faucets look like commercial style faucets, but they don't have the boosted rinsing power to match. Their flow rates are the normal 2.2 gpm. An exception would be a faucet like the KWC Systema -- its pre-rinse faucet has a flow rate of 6 gpm at 60 psi, which is why it has a secondary spout for normal water flow. I've noticed the same thing about most potfillers. They're supposed to fill pots faster than a normal faucet, but their flow rates don't appear to be any higher than a regular faucet's.

I haven't seen that faucet in person. It is nice-looking, so I went to the Elkay site and looked at the specs and drawings. That got me confused. Do the spring-flex hose and spray head detach from the horizontal arm, so that the spray head can hang free and be swung around? I've used a regular (commercial) pre-rinse spray faucet. They are usually much higher than that Elkay, the spring-flex hose hangs freely and can be pushed out of the way. You can add a regular spout too. I haven't really needed any more of a backsplash for a couple of reasons: 1. Most of the time, I'm using the pot filler. The stream is more like a standard faucet and is fine for filling pots and pitchers, handwashing, rinsing veggies, etc. I use the sprayer for rinsing plates/cookware and spraying down the sink. 2. I try to be careful with the sprayer. While I mentioned that I wish the water pressure was a bit stronger, it's actually already much more powerful than a "normal" residential pull-out sprayer. So when I do use it, I make sure the dishes are slanted toward the sink, the sprayer head is pointed to prevent overspray, etc. If it sounds like a huge effort, it's really not; just being mindful of the power of the tool. 3. If you get a pre-rinse faucet, I'd highly recommend considering one with a single-lever mixer. Being able to control temp and pressure simultaneously and one-handed makes a huge difference, and it makes it effortless to lower the pressure to the sprayer to completely eliminate overspray. Honestly, I still end up toweling off the countertop a bit more than before, but it's so worth it.

I assume pre-rinse comes from the stage in commercial dishwashing where you rinse off all the food before running it through the huge sterilizer. It requires a nice strong spray to jet everything off the plates. I was thinking to get one that extends beyond the sink because this is for my prep sink which is in my main prep area not far from the cookstove, and it could double as a potfiller at need. I could also get a regular pullout style, but am rather taken by the option of having both rinse head and regular faucet head on one stem.
