I have the Kohler HiRise bridge gooseneck faucet you are referring to, it is gorgeous SOLID stainless steel through and through. However, yes there is a lot of splashing into my undermount Kohler "Alcott" fireclay apron sink. I am wondering now if the HiRise is too large for my small apron sink.. though i may try a spray attachment to see if it can be minimized. I figured it would be a fine match being both sink/ faucet combo is by Kohler (the saleslady at the Kohler store said it would be fine). However, the Alcott apron sink in the Kohler catalog pics shows a different (perhaps smaller) faucet installed. (We have a tiny kitchen and the Alcott was the smallest apron sink we could find) When i have the faucet barely turned on, say to rinse a spoon, there is alot of splashing. I am considering getting the separate sprayer nozzle installed cos it is difficult to rinse the sink out with the gooseneck. Then again, if you are getting a med-large size apron sink the HiRise may be just perfect. Hope this helps some!

As a side note for anyone who read my last paragraph, I'll now be looking at my 5th Rohl sink since the last one is so uneven my cabinet maker & countertop fabricator have rejected it.

I'm not a fan of a sink with an upper over it. I think you need to stand too close to the front of the door, no matter what. But if you are determined to do that, then by all means I would consider using a farm sink and bumping it out. That means setting it proud (forward) of the front of the sink cabinets and the adjacent base cabinets. I have this arrangement (my sink cabinet is bumped out as well) and it makes working at the sink extremely comfortable because I get farther over it. The trick is in the selection of the sink. The classic Rohl fireclays are the same all the way around. The sink on the floor upthread is the same. But some farm sinks have notches on the side to fit against the cabinet fronts. Some have a flange. Before you choose/buy it's important to figure out how you want the sink to look and then choose one that will do what you wish. There are so many choices, even in SS it shouldn't be a problem. One factor is whether you prefer a 0 radius sink (square corners) or a more traditional sink with rounded corners. How far you want the sink to protrude -- mine stick out 2 inches in front of the cabinet. One sink upthread has the curved front and doesn't protrude much. Etc. My Cifial Highlands faucet is 9" long. It will not reach to all corners of my Shaw's 30" sink but I have a sidespray. The styling is similar to the Mico Country French; I found that virtually every mfr has a similar "traditional" product. So far I've been very happy with mine. I think it's similarly priced to the Mico faucet. Here's a pic:
