Comments (1)Sorry, I can't talk you out of it! I have the DF oven on the Wolf range (the same as the electric wall oven, I assume). I have been very happy with the broiler. and this was the one thing I was worried about. It is plenty strong for my good cook, but not professional, purposes (broiling salmon and seafood, broiling vegetables, carmelizing the tops of desserts, etc.) Of course I'm sure that the infrared broiler on the gas oven is stronger still. Comments (12)We had a side by side refrigerator in the middle of a cabinet run in our last house and it worked very well. There was an island right in front of the refrigerator and the stove was across on the opposite side of the island. You could pull food out and set it on the counters on either side (due to short doors on the side by side) , or you could turn around and set it on the island. Comments (41)Pllog makes a good point. Thank goodness for small mercies - no peeling, no flaking. Funny about that with the previous ovens. Rather surprised about that too as I hadn't heard anything about it. Must say, am a bit mystified by a convection oven whose fan cycles off. Why??? Not to save energy surely since the most energy-light part of the oven would be the fan! I downloaded the manual and saw that bit on page 17 that Rocs pointed out to you. A convection oven that may or may not convect. That's not averaging, I wouldn't say. Anyhow, Monogram has received good reviews and I will say that the forward/backward flow is a not half-bad idea to get good coverage. Not to sound totally condescending, but I just wanted to reiterate a few things that you probably already figured out cooking oh in the course of your life and re: convection anywhere (these are the things that I needed to learn): - pre-heat time. Never mind the beep; let it pre-heat 30-40 mins. - Selecting the correct racks and rack pairs when multi-rack baking. All specify to watch for this esp. with multi-rack cooking. - Air-flow: Take them at their word when they talk whatever their oven needs for clearances and to ensure laminar flow in their ovens. Yours says 1-1.5" clearances on either side from the walls, center the dishes on a rack, stagger them when one on top of the other (mine is v. tolerant about the last in convection mode but the clearances for airflow are definitely imp. I've found) - cooking to dish type: darks, vs. shiny vs. glass. Spills vapourizing to smoke is also surprising. Sounds like the bottom element was on and scorched the spill. I think using your drip try from here on out to help catch spills sounds like the best bet. I don't really know what to say though as it sounds a bit odd. Wouldn't have thought the bottom element could get that hot that it would char spilt pastry. No way that Monogram will come out to check the element to see if it is out of place somewhat? (Its a stretch but that's such an odd happenstance, I'd be dying to see what's under the panels ;-) ). Comments (10)The big question on the counterspace, since you're remodelling to get it, is what do you want to use it for? How many appliances go on it? The MW isn't on the counter. So what else? Coffee maker? Non-tangerine mixer? Canisters? TV? Boombox? Knife block? Wine rack? Paper towel holder? Blender? Juicer? Food processor? Coffee grinder? George Forman? Bread maker? Grain mill? Mug tree? Cookbook holder? Telephone? Mail? Keys? Fruit bowl? Toaster/toaster oven? Kids who insist on sitting on the counters no matter how much you try to teach them not to? Cats? There's a lot more that could go there. But what do you actually keep there? Honestly. If it was there in a smaller kitchen, it'll likely still be there. :) What the increase in counter space will give you is the ability to have two or three people working in the kitchen at once. More space for plating, baking, cooling, and other horizontal surface tasks (that can also flow onto the kitchen table). A place to set up a buffet if your home is horizontal surface challenged. A place to put all of your ingredients out while prepping, rather than just what you're currently working on. I don't think that you'll miss the 2.5 feet that much. There are kitchens that just don't have enough counterspace, as you well know. But once you have enough, that's all you need. My new kitchen has a lot less counterspace than the old one did, but that counterspace was useless and just collected clutter. For actually working at the counter, you need just about the span of your arms at hip level. The rest is all about what else you want to use the counter for. Your pros and cons list is excellent, but going back into fulfilling-dreams-ville, here's mine: Pro: 1. Fulfill wall oven dream. 2. Much easier to use compared to all of your mentions of "low" on range ovens in other threads. Con: 1. Lose 2'-3' of the counterspace that was the whole reason for starting this anyway. As to the things you're giving up, you can also plan for now and later. For instance, something like an Advantium might be a budget buster now, but if you make your microwave enclosure and electrical service the size and shape to accommodate one in the future if you decide you really do want/need a second oven, then you could change it out without being limited by your structure. Similarly, if you put a warming drawer sized drawer, with the correct plug available, you can also add it later. In other words, get the beautiful, functional kitchen now, put in some flexibility, and get the toys later when you have a toys budget....See Moremtnrdredux_gw
