Can you replace a drop-in sink with an undermount sink (granite)?

Hi,

I am not very knowledgeable about kitchens, and you all seem to be very knowledgeable, so I'm hoping to get some help here!

I am not looking to do a complete kitchen remodel but I would like to update a few things in my kitchen. I currently have granite counters and a drop-in cast iron sink. I would like to replace the sink. I'm considering a Blanco silgranit sink, but I would also like it to be undermounted instead of drop-in.

Is this possible? Is it a huge endeavor? I've googled, and see yes, no, and maybe as the answers, so I'm a little confused. Can I tell on my own whether it's possible, or would I need to call a granite fabricator? I can't tell how big my cutout in the granite it for my sink - is there an easy way to figure that out?
