cathedral ceiling with exposed beams - help

I have a split level house with exposed beams, planking on a cathedral ceiling. My best estimate is a roof pitch of 2.1 (almost flat). The height from floor to bottom of center beam is about 9ft. The beams themselves are about 14 inches high. The height at where the wall and ceiling meet is about 7 2/3ft.

So, we are planning on having undercabinet lights (LED), and pendants over our island, but how do I add ambient light?

The kitchen is north-facing, and we live near Chicago - so not much sunlight for most of the year. We cannot use cans due to the type of roof (no attic), so track is the way to go.

I'd appreciate any thoughts, as demolition is starting next week...
