OT-food mill?

I need to buy a food mill to make jam (and keep the seeds out), make tomato sauce from fresh tomatos, etc. I find they range in price from about $30 to well over $100. Anyone out there have/use one and have a recommendation? I want one that is D/W-safe (so no wood handles), has 3 blades (coarse, medium, and small) and preferably stainless, since the old aluminum-plated one I had got nasty and oxidized over time.

I hope it's OK that I asked this on this forum, but there are so many good cooks here, and it's not really an appliance...

I have an old aluminum one from my grandmother that I hand wash. Aluminum definitely gets nasty in the dishwasher. Take a look at lehmans.com for a few options. They are an old-fashioned (except that they have an internet site)Amish store in Ohio that carries a great variety of non-electric kitchen items.

arlosmom, I use my grandmother's food mill too! And I do hand wash mine. the enzymes in dishwasher detergent does a number on the aluminum. The one that Lehmans sells looks really good....nearly identical to my old one....except that the new one is stainless. I may buy one of them myself just so I can stick it in the dishwasher.

check Amazon.com....they seem to have a nice variety of them also.

I have a food mill and the jelly strainer. The food mill is a pass-along from my sister, the jelly strainer a minimal purchase. You should be able to find one on Amazon or at your local hardware store for in the neighborhood of $8-$9, a box of 2 additional bags (that you may not need) for $5. The jelly strainer isn't required, just a bit easier. For years I used cheese cloth or muslin in either a colander, or as a self made bag of a square tied with twine and hanging from a cabinet knob over a bowl. With the strainer frame and bag, I can strain juice and still get something out of my upper cabinet without slinging juice across the counter ;) A simple thing.

Food mills: do they reduce labor for salsa at all?

I just wanted to update you with my first experience using the Salsa screen on my food mill - it was very disappointing. First, there were hardly any pieces, it really was just like the sauce screen but instead it let threw all the tomato seeds! Even if you dont mind eating a million tomato seeds with your salsa you would have to cook down the 'sauce' that came out since there is still so much water in it. I am not sure what type of tomatoes you are using but this year I was able to grow some seeds I received from my Amish neighbors, I think they called them Pink Ladies. They are huge and really solid so instead of doing the boiling then peeling route I just cut them in half or quarters then sliced off the top&bottom then peeled the skin off like you would a potato with a knife!! It saved a ton of time. I did it in the sink and then would rinse off most of the tomato seeds and jell sack - then I diced them for my Annie's Salsa. Last year I didnt have these nice tomatoes, just roma and beefsteak so I would freeze them then after they were frozen the skins just peel right off under hot water. I would then dice them, while frozen, and let them drain in a large strainer. So, best of luck with your Salsa... Every time I make it I say "never again" but then when it is done I am so happy!

In this particular case it is first, that it is Ellie's Topp's recipe and they have all been tested and well within the margins of safety so a bit of flex is allowed. Then second the large amount of the wine and vinegar added is not only sufficient for controlling the pH of the vegetables when compared to several other tested recipes but will also reduce the density. Just as using the large juicy tomatoes rather than just all paste types dilutes the density. If it was all paste tomatoes it would likely be too dry and thick. And finally the longer processing time than usually associated with similar recipes. But none of those factors can be generalized to other recipes. Each recipe, if it is to be modified, has to first be evaluated in its totality. <is it a good practice as a canner to confirm your product isn't way off the mark when putting it in the jars?> It could be IF done accurately and that is the problem - poor quality equipment or mis-use far too often gives false, misleading readings indicating safety when it really isn't. Even the best pH meters require frequent re-calibration and testing and litmus paper expires quickly and is easily affected by atmospheric conditions such as humidity. OK? Dave

resale shops and garage sales always have these things. look for mouli ones. the new ones they're making now are cheap--made in china stuff. break easily. buy an old one for a buck and you'll be much better off.

If you're not making too large a batch, I have a "Foley" that I still like - It's about 15 yrs old; I don't know if they're still being made. Agree with edlakin about the mouli's. Old ones are good but I bought a new one a few years back that I just hated.
