When should I pay contractor for sink fabrication

We're nearing the end of our kitchen remodel -- into the sixth week now. Our contractor has been a bit of a nightmare for one reason and another -- damaging floors; not showing up (no notice) for an agreed appointment and then giving an excuse the following day; not answering his phone. But we're hoping it's nearly over. Putting that to one side...

The granite countertops were supposed to be installed today but yesterday he announced his granite installer will be unavailable and it is now postponed until Friday. He should be dropping off the granite today and finishing off other tasks. One of the granite pieces has been fabricated with a cut-out for an undermount sink.

The contractor has said he requires a check for the fabrication today. I would rather pay on Friday, after installation for two reasons:

(a) A hole isn't much good. I need the hole in the right place and exactly the right size which I can only see after installation.

(b) It will give him an incentive to actually turn up on Friday.

Is this reasonable? When have other people paid for their fabrication?
