Should I re-use my SS sink?

We're getting new laminate countertops installed, and at first I thought we'd get a new sink, but as prices start adding up, the old one isn't looking quite as bad...it's a SS equal double sink. I like the look of the double sinks with one larger bowl and one smaller one, but may not be worth buying new if the old one is in good shape. If I choose a different faucet though, I'm concerned that the holes won't match up. Now we have pull-out sprayer, faucet, lever, and whatever that air hole thing is. I'd love to get a pull-down faucet with the lever attached, which would only require one hole. Can they cover the other ones with a plate or something? I'd also like to add a hot water dispenser - maybe that could fill one of the holes. We'd thought about going the undermount option but I'm just not in love with the way the sink comes all the way to the top of the counter - seems to almost emphasize that you have laminate countertops instead of solid surface. Any thoughts? Thanks!
