Need Layout Help With Narrow Kitchen with Window/Door Issues

A the house stands right now, it is gutted, and anything can go anywhere with the exception of the windows, which can either stay or be sealed up. ONE of the windows needs to turn into a door to the outside, as the existing door is getting sealed up either way, since the cabinets would be better on the wall with no windows.

I need to cover up the back window and door, and putting the new door in one of the side windows. This way, I could have a U or L shaped Kitchen.

Sealing up the back would also allow me to place the fridge on that wall, so it doesn't obstruct the views earlier in the kitchen.

Should I seal up the back window also, for more cabinets?

Does the sink really need to be in front of a window?

I am trying to figure out what type of layout would work best, and the only thing that I want, is at least 2 island seats on a peninsula.

The Brick wall between kitchen and the rest of the house is being removed next week.

Any help would be appreciated.
