Pantry set up, shelf depth

Hi,

I haven't posted much here lately, but have been reading. We are renovating/building a house. Work is progressing pretty well and pretty much on schedule with all framing and the rough plumbing, electrical, and hvac almost done.

We are working on plans for my pantry, which will be about 56" x 54 ". My builder has suggested having one wall of 15" deep shelves and one wall of 18" shelves. We also may have single can depth shelves behind the door (I have a separate broom closet).

is 18" too deep? To me it seems like things might just get lost back there. I was potentially thinking of having one or two lower shelves be that deep to hold big packages of paper towels or drinks. This would also give me something to step on to reach the upper shelves.
