Cree LED 2700 vs 3500k

I liked the whiteness of the 3500k Cree LEDs, but why do they tend to "wash out" the color in the granite and tile?

I installed one of each color on ceiling and held a piece of granite under the 2700k light and I could see all the color, when I move to the left under the 3500k light I could see the color and detail wash out of the granite??

I like the brite white look of the 3500k LED but I an not liking the effect they have on colors. I am putting in cinnamon spice stained cherry cabinets and yellow river or similar granite with a lot of color variation and movement.

It's really hard to make this call without the entire kitchen being done.
