Cutting Granite in 'Wrong' Direction ... good idea?

So I just talked to the fabricator we are likely using for our countertops, and we asked him to price out doing the whole kitchen with Kashmir White vs. doing just the perimeter with K.W. and putting honed Jet Mist on the island. He lobbed an idea out to me because he knows we're trying to do this in as frugal a fashion as possible: To keep the K.W./Jet Mist combo as efficient as possible, he could do with just one slab of each ... but only if the K.W. slab is cut top to bottom, not side to side. This would make whatever "grain" run from backsplash to front edge as opposed to lengthwise down the counter.

I'm really not sure how I feel about that. K.W. isn't a strongly patterned granite, so maybe it's okay. What do you think about this idea? It would allow us to put Jet Mist on the island for only a couple hundred dollars more than just having K.W. everywhere.

I would love to know your opinion on whether it stands a chance of looking okay. Thank you!
