Experiences with converting closet to pantry?

We're in the beginning stages of planning a kitchen renovation. All kinds of issues will come up with layout--mostly having to do with squeezing out more counter space--but today I'm just thinking about pantry possibilities. We have a coat closet adjacent the eating area. Interior dimensions are 36 inches wide, 26.5 inches deep, with 8 ft ceiling. I think the space between the walls is 3 inches.

So I'm thinking we could close it off on the hallway side, put a door in the kitchen side, add lights and shelving, and have a decent sized pantry. Has anyone done this? What were your experiences, good and bad?
