Layout questions for new kitchen in old house

All -

We've got an old house -- an 1890s victorian, that we're in the middle of renovating. It has an old porch that was our kitchen -- maybe 8x12 or so -- that we've ripped off, and are rebuilding.

As of this point, the only thing "locked" in is the size, and the general placement of windows.

Here is what the architect proposed for bidding purposes:

We're considering several changes to this design:

In both, we're reducing the size of the fridge to a 36", and pushing it to the end closer to the door.

Also, in both, we're changing the wall of cabinets closet to the TV room (the wall with the bar sink) to be Pantry -- three cabinets with sink above -- and then another Pantry.

The island isn't changing much, except the DW is moving to the other side of the sink. it is also getting slightly smaller (11'9") to accommodate plenty of room for the small table.

Option 1: Not much else changes. Counters run all the way to the Fridge, with a 45% angle on the corner.

Option 2: Stop the cabinets and counters pretty much where the beam is on the wall with the range. In this option, the range "mirrors" the opposite side of the island. Then, on the wall with the fridge, we get a entire wall of cabinets -- from floor to 42" cabinet height, 4 cabinets from the fridge to the wall. Behind these cabinet doors -- which pocket -- are countertops, for the microwave, kitchenaid, toaster oven, etc --

The +s to option 2 are that there's a good place for those small appliances (out of the way) and lots of storage. The -s are that we lose some countertops.

Thoughts? Other things we should consider?

Finally, from the materials front, we're struggling a bit to find a material that will work for the island. It seems to be corian or copper are the only two that we like and can come that big.

Current thinking is to use white panel cabinets for the island, with some sort of lighter gray counter -- almost concrete color. Then, darker coffee cabinets for eveywhere else, with a lighter (perhaps IceStone?) counter. Then, for the cabinets above the bar sink (between the two pantries) to bring back the white.

Thoughts on materials too?
