Installing wood floor in kitchen-what about under stove?

We are completely gutting our kitchen and starting from scratch. We are definitely going with quarter sawn oak flooring (not engineered but solid) to go with the rest of our floors. (We don't have kids)

First question:

We are going to have a Bluestar range. Should we have the wood floor continue underneath that or finish it at the edge and have a concrete or granite base under the stove?

Second question:

I am getting different opinions on when to finish the floor. It will be stained and polyurethaned. Some say do it after the cabinets are in, and leave the unfinished floor under the cabinets, and others say do the whole floor first, then install.

Any opinions on these are appreciated. Thanks.
