Would You Give Up the Countertop Space

We're going after a modern look that would include cabinets floor to ceiling. To get the look, I would need to give up at least some countertop space. Function is always runs the forefront, but I'm able to bend some.

If countertops are the most important I would have 20 linear feet of countertop space with two 6' and two 4' prep areas. This would allow 8 people working in the kitchen. If I install more modern cabinets, I would shrink my countertops down to 15' and the largest prep area would be 4'. If I really wanted a large space, I could use the seating side of the island and have a 10' prep area but it wouldn't be nearly as convenient.

Would you give up convenient countertop space to achieve your style?
