Moving an outlet 1/4 inch

Ok, I'll get it out in the open: I'm an idiot.

With that on the table, you can stop your laughing, and try to help me!

When remodeling the kitchen, I ran completely new outlets and circuits above the kitchen counter, for blender, coffee machine, etc. The problem is that I miscalculated, and now the outlets are so close to the top of the countertop "backsplash" that the outlet covers will not fit -- I'm off by 1/4". All this is because... well that's a long story that I might go into after I get help, but yes, I'll take 99% of the blame. The way I see it, I can:

1) Cut out the drywall, move the boxes up to an appropriate level (does the code require a certain minimum distance?), and then replace the drywall. Since I'm putting ceramic tile on the wall, the "damage" will be covered up.

2) Trim 1/4 off the bottom of the outlet cover. This won't be the prettiest solution, but it would certainly be the easiest. However, it probably isn't allowed by code.

3) None of the above, which is where you people come in! Maybe someone has an idea I haven't thought of!
