"It sounds all well and good to have a large array of things sitting along your countertop sink line" I do not think there should be an "array of things" along the back of the sink. The air gap is not required if you have a dishwasher with a high loop - dishwashers sold in the last 10 years or more come with the high-loop pre-installed. If you live in the one state in the U.S. that has a code requirement for an air gap (California), you put in the air gap for the inspection, and after that, replace it with an in-counter soap dispenser - as long as your dishwasher has a high loop hose. As has been said in this thread, use a batch feed disposal and you'll not need a button or switch anywhere for the disposal. I have a batch feed disposal. My sink has a single-hole faucet and an in-counter soap dispenser. i.e. two holes behind my sink. That is all.

Chicagoans, thanks. The magnetic plates are an option offered by Columbia Gorge Stoneworks. The magnets are very strong so they hold the plates firmly in place - no screw heads showing and no worry about over-tightening a screw. All our outlets and switches had magnetic steel bodies that they attached to, though in the case of the Lutron outlets we had to break off a plastic tab that covered the steel. Columbia Gorge can also supply some magnets to glue on if the switch or outlet body isn't a magnetic material. Our granite is Azul Do Mar (really it's quartzite - a type of metamorphic rock that is almost entirely made of quartz). It's similar to Azul Macaubas. The latter is primarily white and greenish blue or aqua. Like most stones with a lot of blue, it is kind of pricey due to rarity but not quite as expensive as Azul Macaubas. Cost was the only downside - it cleans up like a dream. It is low porosity so we haven't had to re-seal it. (I don't think it needed the initial sealing based on my tests on the sample but our installer insisted.) It is extremely strong and hard so it doesn't scratch. The cabinets are natural cherry made by DeWils (semi-custum). They are frameless because we wanted maximum storage space. We were very pleased with how sturdy the cabinets were and they filled our order perfectly.

If you're not using corded power tools, I'd just turn off the main breaker, because there might be other wires running through that wall besides the one for that outlet. If you are using corded power tools, then I'd turn off every breaker in the house except for one circuit of receptacles in another part of the house, and use an extension cord from there.

That is exactly what you need, you're good to go. Be sure to seal the back of the box to the house very well. Some people will argue that the back of that box is considered "outside" and romex shouldn't be used there lol.
