Waterlox over oiled butcher block?

We are looking to install a maple edge-grain butcher block countertop in our kitchen. It will be used for seating, not for chopping or cutting. We are thinking about ordering a bb slab finished with mineral oil and refinishing it ourselves with Waterlox in order to reduce the cost.

Has anyone done this before? How would you get the mineral oil out - with mineral spirits? Will Waterlox penetrate with no problems?

We've e-mailed the company that makes Waterlox with theses questions. They said the waterlox should penetrate an oil-treated bb with no problems, but their message was full of marketing pep talk and didn't inspire a lot of trust... :-)

Please help! It's been a very long kitchen remodeling project....
