Shaker vs. other doors

I am searching internet for ideas on ext/int doors for a new construction and found Simpson doors. I like the Shaker style (the house is soft contemporary with Arts&Crafts resonances).

I vaguely remember that there is some difference in construction of Shaker doors. Is it good/bad/cheaper than standard/appropriate for dry desert AZ climate ?

Also, the alu clad window supplier (Eagle) is offering interior pine or 12% upgrade to knotty alder. I would want oak but he indicates that this is an expensive option.

Is hard wood important for (alu clad) window and can you imagine having various species let's say on windows, hardfloor and furniture ?

The floor will be 6" wide hand scraped light oak (engineered hardwood) from builddirect - great price.
