Wine left out overnight.

After a party, two full bottles of good red wine were left out, left open, overnight. I put them in the fridge in the morning. Is there anything I can do with them?

take them out of the frig and start drinking them :D

I so agree. I like warm red far better than cold red. And if you have a problem drinking it, throw it in your pasta sauce or cook a roast in it.

Any which way, do NOT throw it out.

65 at night? Really? If I have to wait that long my growing season will be 1/2 over! They can go in the ground here in about 8-10 days and I know it won't stay that warm by then. Anybody in zone 5 know what temp I can let these guys have a sleep over outside?

Oh shoot! Now I have one more thing to check before I retire for the night: lock the doors; make certain doggie is tucked away for the night; check that the gas stove is turned off ... and now, I have to double check the doors on the refrigerator and freezer! Actually, I'd be more concerned about the foods in the freezer thawing out than I would about the doors to the house being locked! We've all worked hard to prepare and freeze everything in the freezer ... and I don't think anyone reall wants to break into our home. So sorry for your loss -- although I hope you just tough it out and keep everything, being careful, of course, as you consume it. Do you have any enemies you can invite over for a meal? If so, you can have them taste the food first. Just a thought ... Kathy

Since it has been less than 24 hours it can be salvaged but yes you will have to reheat it all to boiling and boil it for 10 mins. then fill fresh washed and boiled jars, use new lids and put it in the fridge immediately. Plan to consume it within 3-4 days max. as it will have a very limited storage life in the fridge due to listeria problems. It can only be stored longer or processed and vacuum sealed if you used one of the approved salsa recipes. So first question would be what recipe did you use? Salsa is one of the most risky foods for inexperienced canners to make since it is a mix of low-acid vegetables with no natural protection against botulism. That it is then eaten straight out of the jar with no further cooking can make it doubly dangerous. It requires very specific amounts of ingredients to be safe to store and very specific amounts of added acid to remain safe for any period of time. It should last a week or so in the fridg - but let it come to room temp before you drink it!!!

According to French modicum for proper wine drinking, red wine should be consumed at room temperature. "Room Temperature" refers to the room temperature of a wine cellar, that being 55 degrees.

White wine should be chilled to a lower temperature than the wine cellar.

Wine keeps much much much longer than a week after opening. Air does not affect wine that much unless you are a wine snob.

After wine has been fermented to it's peak and then has been stabilized, aging is counted in terms of months or years, not days.

All the answers you received are good advice. Red wine can tolerate exposure to oxygen a little longer than white wine without oxidation being apparent. There might be a slight off taste (flat tasting) but there would be absolutely nothing wrong with drinking it. If exposed long enough to certain bacteria it can turn into vinegar but you are talking weeks. I use the bottle covers with the hand air pump to remove much of the air in the bottle, it can keep for several weeks sitting on the kitchen counter with little if any notice of oxidation aftertaste. Dump some into some marinated mushrooms and onions...yum yum. Makes me hungry just thinking about it.
