This is from www.recipegoldmine.com I copied it to save you from the nasty pop-ups: Mimi's Cafe Carrot Bread 1 1/2 cups all-purpose flour 1 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon cinnamon 1/2 teaspoon salt 1 cup vegetable oil 1 cup brown sugar 3 eggs 1/2 cup chopped walnuts 1/2 cup diced canned pineapple, drained 1/2 cup raisins 1 cup finely shredded carrots Sift first five ingredients into a mixing bowl. In a separate bowl, whisk together the oil, sugar and eggs. Stir the liquid mixture into the flour; mix well. Ad the next four ingredients; stir again. Grease and flour a 9-inch square pan or four mini-loaf pans. Fill the pans 2/3 full with batter. Bake at 350 degrees F for about 30 minutes. Mini-loaves take about 20 minutes.

I made this broccoli salad for Thanksgiving - it was so very good! Thank you all for responding to my first post here. :-) I used less bacon, substituted half the broccoli with cauliflower, went ahead with the gold raisins, and chopped cashews. I also used sliced red onion, after soaking it in ice water for a few minutes to mellow the flavor. I had dark raisins and would have used them if they hadn't turned into miniature hockey pucks in the back of the pantry. :-O It was a great salad - a very nice alternative to the leafy greens, and everyone just loved it.

I made the recipe posted by rusty_ns for T&T Steamed Christmas Pudding two days ago. It's GONE! Wonderful.... I'm making it again tomorrow for more holiday friends! For a bit of background, some time ago I spoke with my 80 y.o. mother and asked if there was anything she had not had in a long time that she'd like to have me make for her. She very quickly responded "My mother's carrot pudding." After considerable discussion with my mother, I did exhaustive web searches and finally came upon this recipe, which seems to be exactly the recipe my grandmother made for my mother and my mother's grandfather. The joke was that the grandfather absolutely hated carrots but loved the pudding (nobody ever told him it contained carrots!)... My mother had not had this dish in over 60 years, since her mother passed away (unfortunately, I never knew her). The most difficult part was locating suet. I secured some and easily made this recipe. It was extraordinarily delicious and rich!!!!!!! I thought my mother was levitating when she first tasted it. She said it was EXACTLY what she remembered as a child. What a compliment! The look on her face was priceless. I want to personally thank rusty_ns for providing this top-notch recipe.
