LOOKING for: What is your favorite all-time vegetarian recipe?

I am a new vegetarian here. Due to my son becoming one first. Can anyone share their favorite recipe that I may try. Thanks very much. Marlene

I just love Tofu Scramble:

1 lb firm tofu (drained and cubed in large chunks)
mushrooms (as many as you like -- quarter them)
onion
fresh spinach (as much as you like -- but it cooks down)
tomato (chopped in big chunks)
spices and herbs -- (dill, garlic, season salt, pepper, etc. -- whatever you want!)
olive oil

Put some olive oil in a non-stick skillet. Fry the onions and mushrooms until soft (start using those spices and herbs now!) Add your tomatoe and tofu to start warming them -- then shortly after that add your spinach. Place lid on skillet, but stir every couple of minutes until the spinach is wilted as much as you desire). Serve hot. This is really good with fried potatoes and good bread! Great for breakfast or dinner! And the Tofu Scramble warms nicely in the microwave the next day at work.

Hi Marlene, I thought you'd be swamped with recipes by now!

There's no end to my favorite recipes. A few simple ideas: I love pasta with fresh veggies - the veggies can be steamed or roasted or grilled or cooked into a sauce. For example:
1. fresh cherry tomatoes, garlic, basil - half or quarter tomatoes and heat all in a non-stick skillet just long enough to heat. Toss with pasta. (Has to be garden tomatoes, tho, store tomatoes just aren't the same!!).
2. grill veggies of choice and toss with pasta. I love grilled red peppers, onions, eggplant, summer squash. Add herbs like basil or rosemary... yum!
3. Another one that needs garden tomatoes: cook tomatoes and green beans - onion if you like - basil - garlic - cook this all well (I know, I know, veggies are healthier crispy, but this is sooo good!) for 20-30 minutes. Serve over pasta or rice.

I have a recipe for lentils and eggplant, kind of a BBQ flavor, that I love. Let me know if you're interested and I'll send it to you. There's lots you can do with lentils (and beans) too - lentil burgers are great - I like black bean salad with celery and red onion and a lime dressing - or a lentil and potato salad, hot, with a vinegar dressing...

The simpler, the better, and in my opinion, the freshest best veggies make a world of difference.

I do stir-fry with or without tofu. Tofu is fun and you can do tons with it.

Check out your library - should be some great books there - and do a search on the internet. Here's one link (below) to get you started that has more links attached to it.

If you aren't vegan, (or even if you are - just ignore the dairy recipes) look at Nikki and David Goldbeck's cookbook, I think it's called American Wholefoods Cuisine. Chock full of great stuff! as are many other books.

How old is your son? Does he have strong preferences or is he willing to experiment? Those things can make a huge difference in what he's willing to try. Good for him for making this decision, and good for you for supporting him!!

This is refrigerated, not frozen: PINK TORTE 1 box coconut macaroon cookies 1 pint heavy whipping cream 1 can crushed pineapple, drained 2 egg whites 1/2 cup sugar 1 cup boiling water 1 pkg Jello (any red color) Crush cookies in a processor to make fine crumbs. Pour Jello into boiling water, stir until Jello is dissolved & refrigerate until partially set. Beat egg whites w/sugar until stiff. In a separate bowl, beat whipping cream until thick. Remove Jello from refrigerator & beat until foamy. combine egg whites & whipping cream. Fold in Jello until entire mixture is smooth, no lumps. (This will be the pink mixture). Grease bottom & sides of a springform pan (or you can use a 9x13" pan.) Sprinkle 1/3 of the cookie crumbs on the bottom & sides of the pan. Pour in 1/2 of hte pink mixture. Sprinkle with 1/3 of the macaroon crumbs, then layer all of the pineapple & then the remaining pink mixture. Finish topping with the last of the cookie crums. Refrigerate overnight.~~Kitchen Miracles HEATH BAR ICE CREAM PIE (make day before) - Serves 12 1 1/4 cups chocolate wafer crumbs 1/4 cup butter, mleted 12 (about 12 oz) Heath bars, refrigerated to harden 1/2 gallon vanilla ice cream, softened Mix chocolate wafer crumbs with 1/3 cup butter, mleted. Line 9x13" pan with crumb mixture. Pat down & refrigerate until firm. crush hardened Heat bars but placing unwrapped candy in a plastic bag & hitting with rolling pin or saucepan bottom. Mix w/softened ice cream. Put in crust & freeze overnight. Serve with warmed sauce. SAUCE: 1/4 cup butter 6 oz pkg chocolate chips 1 cup confectioners' sugar 6 1/2 oz evaporated milk (like Pet milk) 1 tsp vanilla Melt butter w/chocolate chips in top of double boiler. Add confectioners' sugar & evaporated milk. Cook 8 minutes or until thickened. Ad vanilla. Serve sauce warm over pie.~~Pass the Plate CHRISTMAS TRIFLE (serve 8-10) 12 ladyfingers, sponge cake pieces or pieces of yellow cake 4 TBL rum, sherry or brandy 1/2 cup raspberry jam 1/2 cup slivered almonds 1 large pkg vanilla pudding (NOT the instant type) 1 cup heavy cream, whipped Place ladyfingers in 1 layer in a glass bowl. sparinkle with rum. Cover with a thin layer of jam & slivered almonds, reserving a few almonds for topping. Prepare pudding according to pkg directions, cool & spread in an even layer over almonds. Spread whipped cream over pudding & sprinkle reserved almonds over top. Chill a few hours. To serve, cut straight down through all layers for each serving.~~Bound to Please

Anyone who grew up during "The Great Depression Days" (dating myself, again!) knew about Red Flannel Hash. A tasty way to recycle leftovers from the dinner table. Taken from "The Old Farmer's Almanac"........ Q What is red flannel hash? A In old-time New England, red flannel hash was any combination of hash to which red beets were added, the standard hash being made of corned beef, onions, turnips, potatoes, and seasonings. Without beets, it was white flannel hash. Don't sneak in any orts (scraps meant for the chickens or the compost) if you are proud of your hash. RonÂs Meatballs and Spaghetti This recipe comes from my grandmother. I donÂt know where she got it from but it is at least 130 years old as of 2007 and comes from New Orleans. As usual with old recipes there are no measurements. Meatballs: Hamburger Onions, finely chopped Bread crumbs 2 or 3 eggs for binder depending on amount of hamburger Salt and Black Pepper Mix all and form small, half-dollar, meatballs. Sauce: Onions chopped Bell pepper chopped Celery chopped Amount of Onions equal Bell pepper and Celery combined. "The Trinity" Garlic 2 or more cloves minced 2 Bay leaves Thyme Flour 1 Tbl or more to coat vegetables Tomato sauce, not paste. Water Directions: Saute meatballs in batches and remove. In same pot sautÃ© vegetables. When cooked add flour to coat and cook for a couple of minutes more Â donÂt burn. Add tomato sauce to develop a rich red color. Cook down stirring often then add water to half way up pot. When well mixed and cooked add meatballs and continue to cook on slow fire uncovered til done. Stir to prevent sticking. ThatÂs the recipe Â now my tips. The amount of flour is used to make a kind of roux with the fat left from the meatballs so the more fat left the more flour needed to absorb. At this point you need to keep stirring just like making a roux and have the tomato sauce ready to cool it down before it burns. This step only takes a minute or two. Rich red color is what it says. Cooking down means reducing til the mixture is thickened. As it thickens it will tend to stick. The hotter you cook it the faster it will try to stick and the closer youÂll have to watch it. It is cooked down (reduced, thickened) when bubbles form on the surface and pop. Kind of messy unless you use a Âsplatter coverÂ, one of those screen wire things that covers a pot. Add water. A good rule of thumb is to add as much water as tomato sauce. Fill the empty tomato sauce cans with water. Cooked til done. The longer it cooks the more flavor is transferred between the sauce and the meatballs. ThatÂs why the meatballs are small. Important! While not mentioned, it was passed down. In the final stage of cooking til done you need to taste to see if enough of the salt and pepper seasoning transferred to the sauce and, if sauce is bitter add a pinch of sugar. And a final tip: During final stage you can turn it off and let it sit til youÂre ready to complete the process. This resting/cooling stage lets the flavors meld as in all Creole cooking Â its always better the next day.

They'd be even better on a grill: LIME RIBS 4-6 lbs spareribs cut into 2-3 rib sections 1/4 cup freshly sqeezed lime juice 1 TBL white vinegar 2 cups dry white wine 1/4 cup soy sauce 2 cloves minced garlic 1 tsp nutmeg 1 large sprig fresh rosemary or 2 tsp crushed dried 1 lime, quartered for garnish Arrange ribs in a single layer in alarge non-reactive dish. Whisk together all ingredients through the rosemary in a medium bowl & pour over the ribs. Turn the ribs so they are moistened on all sides, cover & refrigerate for at least 24 hours turning them several times so they are evenly marinated. Preheat oven to 400Â° or build a good sized fire in a barbecue. Drain the ribs, reserving the marinade. Place in a non-reactive baking pan in 1 layer, using 2 lbs if necessary & bake in the center of the oven, basting frequently until golden, crisp & cooked through, 55-60 minutes. Turn occasionally to make sure they cook evenly. If using a grill, spread the coals out when they are red & dusted w/ash. Lightly oil the grill rack & place 3" above the coals. Cook the ribs, basting & turning them, 55-60 minutes. To serve, drain off the fat & transfer to a warmed shallow platter. Garnish w/lime wedges.~~ Cindy5NY's Shrimp Lime Pasta Salad 1 pound medium shell pasta 1 pound cooked shrimp 1/2 cup green onions, sliced 2 stalks celery, chopped 1 1/2 cups Ranch dressing (preferably homemade) Lime juice Cook pasta, drain, cool. Combine pasta, shrimp, onions, celery, and half of Ranch dressing, add a couple of squirts of lime juice. Just before serving, add remaining dressing and a couple more squirts of lime juice, according to taste. Mikey's Jamaican Jerk Wings 4 Scotch Bonnet Chilies (or any hot pepper, amount depending upon your taste - we use much less than called for!) 1 Bunch Scallions (Both White & Green Part, trimmed and chopped coarsely 2 Shallots - Halved 1 Small Onion - Quartered 2 Cloves of Peeled Garlic 1 T Grated Fresh Ginger 2 t Chopped Thyme or 1t dried 2 t Ground All Spice 3 T Canola Oil 3 T Soy Sauce 3 T Lime Juice 2 T Packed Brown Sugar 2 T salt 1 t ground black pepper 1 Cup of water This is enough to marinate 4 pounds of Meat Combine Chiles. Scallions, Shallots, Onion, Garlic, Ginger, Thyme. All Spice, Oil, Soy, Lime Juice, Sugar, Salt, Pepper, and Water. Blend in a blender until smooth, Marinate from a few hours to several days Grill, turning often. Mike's quick tip, Sprinkle extra Thyme while grilling.

If you eat cheese, you will love Fettucini with spinach Pesto. I actually got this recipe off the back of a package of Sargento Shredded Parmesan. The best thing about it is it's quick and colorful, which makes it great for company. I almost always serve this when I have dinner guests along with fresh bread and salad. It's a hit!

Fettuccini with Spinach Pesto
Serves: 4

12 ounce fettuccini
2/3 cup olive oil
1 Â¼ cup shredded Parmesan cheese (1 Sargento pkg.)
Â½ cup walnut pieces
1 large clove garlic, coarsely chopped
Â½ teaspoon salt
Â¼ teaspoon pepper
1 10-ounce pkg. frozen spinach, thawed and squeezed dry
1 7-ounce jar roasted red peppers, drained and cut into strips

Cook pasta according to package directions.
Meanwhile, place oil, cheese, walnuts, garlic, salt and pepper in blender or food processor. Cover and process until nuts are finely chopped.
Add spinach; process until spinach is finely chopped.
Toss hot pasta with spinach mixture and peppers. Serve with additional cheese if desired.

My favorite combo is a home made version of Rice a Roni with tofu. I use the soft tofu finely chopped which I simmer about five minutes in broth, and add to the rice mixture Otherwise I pretty much use the Rice A Roni type instructions (that's where I started before switching to home made) Any flavor works.
