LOOKING for: egg substitute

I am looking for an egg substitute to use in baked goods. Many of my friends are vegetarian, and also do not eat eggs. All of the substitutes I have read about have either egg whites or geletin in them (obviously neither is an appropriate choice.)

I have heard you can buy such things in natural food markets; I am hoping to find one I can make using ingredients I already have (or can buy at a regular supermarket.)

Hi Jen - this is a good substitute, and not too terribly hard to find the ingredients.
Check out a bulk store!

Ener-G Type Egg Replacer

1 cup potato starch
3/4 cup tapioca flour
2 tsps baking powder

Mix all well.
Store in airtight container.

To use:
1 & 1/2 tsp powder + 2 Tbs water = 1 egg.
1 & 1/2 tsp powder + 1 Tbs water = 1 egg yolk.

When measuring, press powder firmly into measuring spoon.

Hi, I hope this will help.
In many recipes you can create your own egg substitute by any of the following methods: use one ounce of mashed tofu; use 1/2 mashed banana in sweet recipes; mix one tablespoon of flax meal with two tablespoons water; or use one tablespoon of corn starch or arrowroot mixed with two tablespoons of water. These techniques will help the recipe to "bind" when eggs are included for that purpose. You just have try the different ideas to see what works best in your favorite recipes.

I also agree with Beverly. My vodka sauce also has no broth. Vodka Sauce olive oil crushed red pepper, to taste small onion, chopped fine 2 cans (large) tomato puree garlic, 4-5 cloves to taste pint heavy cream salt pepper fresh parsley parmesan cheese Italian seasonings (basil, oregano, whatever) 3/4 cup vodka Cover bottom of pan with oil. Add chopped onion, dash salt. Saute add garlic. Saute. Stir in your choice of seasonings, pepper. Add vodka and allow to cook a bit. Add tomatoes. Simmer for about 45 min to an hour. Add heavy cream, whisk in so it doesn't curdle. Heat on low. Toss with pasta, fresh parmesan and chopped parsley.

Maureen, I know that you need to use some baking soda when you use buttermilk to bake with. I found these instructions: "Leavened buttermilk recipes usually include baking soda. Take care in substituting buttermilk for regular milk when using baking powder, as it upsets the balance of alkali to acid. Buttermilk has more acid than regular milk, which will reduce the carbon dioxide released and thwart the leavening process. To achieve the desired result when using buttermilk instead of milk, substitute baking soda for some or all for of the baking powder. For each cup of buttermilk used in place of sweet milk, reduce the amount of baking powder by two teaspoons, and replace with 1/2 teaspoon of baking soda." Ann

Several possibilities. Tofu can substitute. Get the soft stuff and whip it through a blender. If necessary, add a little cream to thin it down. Try draining the yoghurt. Line a collander with cheesecloth and pour the yoghurt into it. Let it drain until the thickness you like. Do not let it go overnight, or you'll have yoghurt cheese, and you'll have to thin it down again. Cream cheese thnnied with wither cream or the soured cream you have available. Let the cream cheese come to room temperature before whipping it with the cream. You can also thin the cream cheese with mayo if you like that sort of thing. BTW, don't they still sell clotted cream in Jolly Olde? Check that out as a possible substitute.

Ah you never know what's in my desk drawers at work... Deviled Eggs a la Sam 10 large eggs 2 slices double thick proscuitto or 4 regular (If no faith in ham, use pastrami) Guacamole 2 ripe avocados 1/2 small onion minced 4 cherry tomatoes minced 1 T water 1/2 tsp ground cumin 1/4 tsp granualted garlic 1 large lime (juice of) 1 tsp salt dash hot red pepper to taste 2 tsp. fresh cilantro minced Make guacamole while eggs are cooking by mixing water and spices together. Halve avocados, remove pits and skin, and add to bowl in chunks. Add onion lime juice and salt. Mash with hand masher and stir to blend. Add hot pepper if desired. Cover with plastic wrap patted on surface. Peel eggs, cut in half and remove yolks for other use (salad). Cut small slice off bottom to lay flat if needed. Cube proscuitto and stir into guacamole and fill eggs. Sprinkle with chopped cilantro and enjoy 20 deviled eggs a la sam.

Actually, the recipe that I wanted to try first is banana bread, which already has 4 bananas in it (and one egg.) Maybe it doesn't need the egg after all? Thanks for all the suggestions!

All you need is applesauce. 1/4 cup per egg. And it doesn't change the taste of the recipe.

The problem I have is that without eggs my cakes sometimes do not rise and my brownies seperate (oil floats to the top while in the oven). I use Ener-G egg replacer. Any suggestions?

About two years ago Prevention magazine had a piece on using flaxseed meal (cooked ) as an egg substitute. They most likely have a website and a help line.

Tightwad Gazette suggests using one heaping tablespoon of soy flour and one tablespoon of water to substitute an egg in baking.

It works well in most cases although the author reported that she got flat and hard cookies when she used this substitute TOGETHER with applesauce for oil.

Here's a list of egg subs,courtesy of PETA...

** Eggs-citing Eggless Eggs One egg (or even two) in a recipe can often simply be skipped,
but there are also many tried and true substitutes that work wonders:

Binding for burgers and loaves:

Mashed potato or avocado
Moistened bread crumbs or rolled oats
Tahini (sesame butter) and nut butters

Baking (each substitute replaces one egg):

Commercial egg replacer (for example, 1 1/2 tsp. ENER-G + 2 Tbsp. water)

3 Tbsp. tofu blended with the liquid in the recipe

2 Tbsp. cornstarch, potato starch, or arrowroot mixed with 2 Tbsp. water

1 heaping Tbsp. soy flour + 2 Tbsp. water

1/2 banana, mashed

1 Tbsp. flax seeds + 1/2 cup water blended for 1 to 2 minutes or until the mixture is
thick and has the consistency of beaten egg whites
