RECIPE: Need low sugar recipes for holidays

Hi: My cardiologist has me on "Sugarbusters" forever.. I have been on no sugar, nothing white for over a year now and I feel wonderful, no longer on diabetes medication, so I guess I can hang in there. I have found that sometimes I can use 1 tablespoon of sugar instead of 1 cup, and the recipes tastes pretty good. But I need lots of recipes that you have found. Please take the time and send some. Hi Monica,
I'm am a similar diet, but a bit more restrictive. You should seriously look into using Stevia or Medjool dates for sweetness in recipes, snacks, and drinks. Dates are rather high is sucrose and have some glucose, but are so rich you really can't eat that many at once anyway. Stevia is a tropical herb which has been throughly tested and no adverse reactions observed. Purified Stevia extracts, available at most health food stores, is 200-400X sweeter than the same amount of refined sugar (but there is no sugar in Stevia). I use both to flavor teas, make non-bake form cakes, and raw as afternoon snacks. If you want any info, just email me :o)

MONICA,

I moderate the Sugar Busters boards over at the 3FC'S site and have been doing so for almost 3 years. We have a ton of recipes you can easily use, esp. if you have access to agave syrup.nectar. My crustless cheesecake is to die for, if I don't say so myself.

Dave - I always wonder why the US uses volume measurements for dry ingredients when there is so much margin for error. Do you think you'd ever go over to weight? Is there any movement in that direction? Habit probably. But hey it's better then "pinch of" and "handful of". :-) Was talking about that with the grandsons last week and apparently they are learning it the 'new' way in school along with metrics (which they prefer). They were trying to explain it to me. So while Grandpa tends to go Huh?? the younger generations are much more open to making the needed changes it seems. Every time the issue has come up in the US in the past - from what I read anyway - the baby boomer generation (we AARP members) tend to raise cain. But yes I do see a very gradual (some would call it sneaky) shifting in labeling and measurement instructions. Government is just waiting for we old stubborn foggies to die off before making it all official and required. Dave

Low sugar peach jam without pectin recipe.

A longer process time? Not sure what you mean by that. Peaches are low-acid and low-pectin so getting them to set well with no commercial pectin and reduced sugar is not likely. You can in theory cook the jam long enough to evaporate out sufficient water for a thicker mixture but it's not truly jelled and there's a risk of over-cooking and the loss of freshness of taste. The set of a jam requires a specific ratio of acid+sugar+pectin. So in a sense you're asking mother nature to break her own rules. While some reduction of sugar is possible it's likely the best result will be a softer set preserve. The other option would be to improve the setting qualities by mixing the peaches with a higher-pectin fruit or fruit juice, like apple. You can, in fact, make your own natural pectin base from apples or citrus and then use it in your jams. Carol

I don't remember the name of the pectin I used, but it is NOT Smucker's. I still have the Smucker's in my pantry and checked their recipe and it's different. All I remember, is that it was a name brand. I'll buy some more pectin this weekend in case I find some fruit on sale. All the pectin's are in the same place in a grocery store. Just go to a big store so they'll have more than one brand. The Smucker's box says "Fruit Pectin - no sugar needed" and the brand I used said about the same thing. Hope you have fun like I did.
