Here is my Spiced Nut Recipe: Spiced Nuts 2-TBSPs. Butter 3- cups nuts ( I use a combo of walnuts, pecans,peanuts and almonds) 1-TBSP. Worcestershire sauce 1-tsp. Chili powder ½-tsp. Garlic salt ¼- tsp Cayenne pepper Melt butter in pan in a 300 degree oven. Add Worcestershire sauce and nuts. Mix well. Bake for 30 minutes, stirring occasionally. Remove nuts from oven and sprinkle with spices.

My FIL is a diabetic also. What the dietican told him was to watch his carbohydrates, drink diet soda. He can eat just about anything as long as he watches the proportions. The only ice cream he can really have is the Eskimo Pie stick which has Nutrasweet, and it is only 13 carbohydrates. You might want to go to the following website, www.cooksrecipes.com. Click on diabetic recipes. There a about 4 or 5 categories to pick from. Also, I have used Sweet & Low for a couple of deserts. They too have a website. How about giving him sugar-free jello and pudding as a change. Hope this helps.

Contact the American Diabetes Assoc. They have a free catalog they will send to anyone, it contains great cookbooks and exchange list booklets that are relatively inexpensive. One series is called "A Month of Meals" with 5 different cookbooks. Mine is "Month of Meals-Classic Cooking", but they also have "Meals on the Go", "Old-Time Favorites" and many others. My sister's mother-in-law battled for years to keep her sugar under control "on her own". Then her doctor recommended she get some of these cookbooks and her sugar was 120 the first time he tested her after she began using them.
