In my opinion, if you are only planting 2 or 3 tomato plants, there is no reason to stagger them. I am in zone 7 North Carolina, so my growing season is likely different than yours, however, my tomatoes grew and produced all summer long and into the fall some, not just 1 month. Plus the tomatoes you are planning to grow are 3 different types used for 3 different purposes (roma, slicing, cherry) so it is ok to have some of all at the same time. Do check to make sure if the tomato varieties you are growing are determinate or indeterminate. Indeterminate tomatoes can easily be trellised 1 per square foot by keeping the suckers pruned as it grows upwards. Tomatoes do not grow onto a trellis by themselves like beans do - as they grow, you weave them in and out up the trellis. I have left about a little over a foot of room behind my trellis that I can walk behind it and tend to my trellised plants from the back side. In fact, my garden interior dimensions are approx 18 feet x 2.75 feet (31-32 inches). I have that 32 inches divided into 3 squares - 12 inches, 12 inches, and 7-8 inches deep for the back square where my trellis is. My trellis sits about 3-4 inches in from the back garden edge over the middle of my 8 inch square. This was plenty of space for my tomatoes planted one plant per 8" deep x 12" wide square last year. I did keep them pruned to one main vine only. I have read that sugar baby watermelon can easily be trellised. I have those seeds myself and will be trellising them this year. I will also note that I have a very strong trellis. I will be growing the following on my trellis ... peas, tomatoes, watermelon, cantaloupe, honeydew (if I can ever find any seeds!), cucumber, blackeye peas (cowpeas). Peas and beans are planted on the trellis in 2 rows of 4, one row on each side of the trellis, all in one square foot, which will give you 8 bean plants per square foot. Cucumber is planted 2 per square foot in one row along the trellis. Unless you are pickling cukes, I think 1 or 2 plants is plenty. If you do 2 squares of beans, 1 square of cukes, and 3 squares of tomato, that is your 6 feet of trellis. However, here is an idea ... you were going to originally have 2 beds of 4x4, I am assuming they were side by side ? If so, could you do one bed of 3x8 ? There is no such thing as too much trellis in my opinion ! With 8 feet of trellis, you could also trellis your sugar babies. If you do not trellis the watermelon, I think you should plan on putting it elsewhere, as they take up a lot of room on the ground. Or possibly plant it in a corner of the bed and sprawl it outside of the bed. Assuming 3x6, with your 6 squares of trellis planned for, that leaves 12 squares ... I recommend the following ... plant your 2 pepper plants in the middle row next to the tomatoes on your trellis. The 10 remaining squares can all be broccoli and carrots and the watermelon. Staggered planting for those would be good. I have read online to plan for 5 to 10 broccoli plants per person and 20 to 40 carrots per person. Obviously, you will not have room for all that, so do what you can. Mel recommends 16 carrots per square. My carrot packages call for 2-3" spacing between carrots which would be 36 carrots per square on 2" spacing (6 rows of 6) or 16 carrots per square on 3" spacing. Last year, I think anniesgranny planted on 1.5" spacing at 64 carrots per square !! She harvested some of them as baby carrots though and reported great results. Watermelon will likely yield 1-2 melons per plant. This is also my first year for broccoli. I have read that once you cut the first head, more little ones will sprout from the cut area. Broccoli & carrots are spring/fall veggies, while all of your others are summer veggies. In the south, we have a definite spring season and a very hot summer season which does not work for broccoli & carrots thru the summer. My broccoli will be done by about June 1, at which point I will put something else in that space (bush beans) and then in the fall I will plant the cool weather crops again. If you do end up using cinder blocks, a lot of people use the holes in the blocks to plant other things like herbs, flowers, onions, etc. Be sure to calculate the width of the blocks in your plan to account for what the interior dimensions of your garden will be. My bed is built with 4x4's of treated lumber and 2x8's of untreated lumber. I do not have an answer on the slugs question, as I luckily did not have a problem with them. I have just started my first compost bin this year as well, so am not speaking from authority, but I think there is no problem with compost being in the shade from what I have read. Mine is, so I really hope it is fine ! You can build a free compost bin by using shipping pallets (find for free on craiglist) and tie them together with wire coat hangers. It also looks pretty nice in my opinion with the boards oriented vertically. Do a google search for compost bins made from pallets. Marquisa, My husband, myself and our two kids opened up a roadside stand last year for the first time. We took over by grandmother's 2 acre garden and took advantage of the good location and opened a stand on the edge of the road during the summer and stayed open until Halloween. We were open weekends and then in the fall we were open full time for 3 weeks during fall harvest. We used a big metal mailbox attached to a 12 foot wood table for when we were gone (as we don't live there but a few miles away. We left produce out with and signs for pricing and the honour system was kept. Our phone # is listed on a sign so people could contact us right away if needed. We would check it everyday and restock produce during the week and be open on Saturday and Sunday 8:00 to 5:00. I also sold vegetables directly to friends, members at my sister's health club, co-workers....all because of word of mouth and letting people know what I had. I ran off a produce list and made posters up and posted them on every bulletin board I could find. I listed all the varieties of vege's we had and when they were available. Our stand consisted of the big tent(awning)I purchased from WalMart for $30 that we placed two table under and then placed various other tables and other containers around the awning. You need some kind of protection from the sun as some vegetables will wilt and shrink quickly if left out. We thought we would sell more vegetables than we did...late July was slow at the stand but I sold a lot to my other buyers. My neighbor daughter runs a mexican restaurant and she purchased the majority of my peppers and onions after I gave her a flat of various vege's to use. Some of my best customers were the ones I gave them a new variety of squash or vegetable to try and they would come back out and bring a friend or family member. Summer crops that sold include red and white potatoes....red being the top seller. We sold by the pound and had the small potatoes already bagged. We sold white, purple and yellow onions 3 for $1.00 or a flat crate of them for $3.00. Tomatoes were late this year and so the majority of our crop we started selling late in August. I sold so many to my coworkers and neighbors I usually didn't have a large supply on hand. Top seller was Celebrity and the cherry or Sweet 100 varieties. The zucchini were tricky and had to be protected from the sun after they were picked. Tip:The eightball variety gets too large very quickly so you need to keep this picked everyday. Come fall we had 9 varieties of squash and around 17 variety of pumpkins and we sold around 800 pumpkins and 450 squash in our stand. I also sold broomcorn, field sorghum, indian corn, popcorn and ornamental gourds. The broomcorn was a huge hit with the local ladies for fall decoration and was so easy to grow....I would sell it for either $3.00 or $5.00, depending on how big of bundle they wanted. We sold out broomcorn in early November. It was very profitable and we had lots of fun running the stand and meeting new people. As to your questions, I can help with a few suggestions... " Is there a formula or "best guess" as to how much of which vegetable we should produce for our potential customer base? Vegetables can be tricky,in the sense of knowing what will sell and what won't. We grew cucumbers, zucchini (both Fordham and Eight-Ball varieties), tomatoes(14 different varieties), onions, squash, peppers (bell peppers, jalapeno, chili, and hot peppers). The cucumbers and zucchini has to be sold more quickly and protected by the sun. I would pickle or freeze the extra or leftovers. Grow varieties of vegetables you will enjoy to eat or can process and keep for later time. Don't go overboard on peppers or tomatoes until you know you can get rid of them. For you if you have limited space look for bush varieties of vegetables to plant. You can interplant some varieties...find a new farmer's almanac and it will help you figure out what varieties of vegetables can be grown with each other or with flower varieties. "What proportion of your garden would you dedicate to cut flowers and how much to vegetables?" We were going to have cut flowers at our stand and we planted large zinnias, cosmos , sunflowers and marigold on the edge of the vegetable garden...we went to the farmer's market and found that their was lots of competition. We sold some flowers at our stand on weekends in August... we placed big vases or buckets full of different flowers and sold then for $3 or $4 per bundle. It was a pain and not our main seller...once we started selling broom corn I gave up on selling fresh flowers. Plant what you can grow easily, know you can rid of(sell, give away, freeze, or can) and grow what you will make the most profit on. Our best and most profitable was small ornamental gourds. I had wagons full of them and sold them for 5 for a dollar. I planted 4 packets of mixed ornamental gourds and ran them up fences to save space. We sold a large supply of potatoes and squash in the fall. Many varieties of squash come in bush variety so they don't vine out as much. " When is the peak time for sales? In the morning or evening when people are coming home from work?" Saturday mornings were always good and late Sunday mornings(after church would let out) we got quite a few regulars back. I always opened up at 8:00 in the morning and my regulars would rely on it. On weekdays I would check the lock box and work in garden for a couple hours and be available at stand and we got quite a few people to stop on their way home from work. Best advice I can give you is.. Have a nice and full looking display. Clean your vegetables, have sacks and hand them out or have large supply of them(I used old grocery sacks or bought small brown sacks at Walmart). Keep your product display full and and colorful. Also know your product..the more you know about variety, ways to cook it or process the better...I kept my favorite recipes on a recipe run off sheet and would hand them out to regulars. Use signs on the side of the road and tie balloons to your mailbox or to fence posts on weekends. Many people would see balloons and think our stand was a garage sale and would slow down long enough to catch interest to what we were selling. Thanks for all the ideas. Compumom, unfortunately, I bought the mushroom turnovers last week, so I'll stick with them. However, I agree that a few more fresh items would be nice. I think I'll make some cherry tomato & fresh mozzarella skewers. Marinate the small mozzarella balls and use both red & golden tomatoes. Depending on how energetic I am, I might even add some marinated mushrooms too. I also will include a bowl of cubed fresh pineapple. I don't want to add any other fruits because I don't want to upstage the fruit tart my daughter-in-law is making. Thanks again for your help and suggestions. I'm sure we'll have a wonderful time. Turn into a bowl. Coarsely chop pecans. Add pecans and pimentos with juice to the mayonnaise mixture. Add grated cheese. Stir well to combine. Store in refrigerator at least 1 hour before serving. The spread is even better the next day. Serve on bread, crackers or on vegetables.

Adding in: coffee and tea, vinegar, mustard. Umm, wine. I seldom eat mayo or ketchup. grainlady, thanks for the seven survival foods -- I'd have to test the dried egg things to see if I react badly to them or not. One reason I plan to have chickens when I move! I know I am fine with whole eggs, and I go through about ten a week. I do keep coconut milk here, and will occasionally want milk-milk (as milk or as yogurt). I use butter or ghee, but it takes me about three or four months to go through a pound package. Fats - yes, to coconut oil, or to having some sort of healthy oil around -- I do use various types regularly. And there is plenty of coconut oil here. Citrus juice - I use a lot of lemon, lime and grapefruit, at the moment all fresh. Potatoes - I have a load of them from the farmer's markets I went to shortly before my accident. They are dwindling, but very good. I'll check out Golden Grill Hashbrown potatoes. Sound good to me! I have canned beef and pork (a friend and I put up); I have several packages of sardines (bought), I have canned cheese. I'm not really jonesing for the canned cheese, however. Not something that falls into the category of want to have every week/frequently. (Actually, the milk doesn't fall into that category, either...) Will have to check out freeze dried cheese. Maybe that tastes better. I still mean to order the tomato powder. Haven't really had any real urge for grains, beans/legumes or seeds. (And I have them here - grains being rice, wild rice, quinoa, and oatmeal) Seeds for sprouting micro-greens or just plain sprouts - great idea!!! Sweeteners -- Haven't touched either my honey, the maple syrup, or the palm sugar I have here. Yes, I did eat some dessert things people dropped off, but just out of obligation, not out of desire. Not a "staple" I really do want to eat every week!
