maybe I do need to explain my idea of dry brining a little bit. I did a google search and it seems I differ from some of the info. Almost all of it is about meat and I must tell you that dry brining is just as good for vegetables. It takes that little hard edge (maybe bitter for some people) off the vegetable making it more palatable. What I do is pretty informal. I prepare vegetables for cooking such as washing and snipping off the end of green beans, or slicing mushrooms or peeling some of the coarse stem off broccoli and chop, etc. I then put the vegetables in a collander. I use about 1 tsp kosher salt per 8 oz of fresh mushrooms. Or two teaspoons for 1 1/2 pounds of green beans. For carrots, I use two teaspoons for 10 mediums carrots thickly sliced (on the diagonal). But don't leave out the seasoning step. Stir the salt into the vegetables in the collander. Then I mince a large jalapeno with seeds in my food processor. Then stir the jalapeno bits into the vegetable mixture in the collander. I think this is the point you could substitute other seasonings such as thyme or dill or garlic or oregano. Stir everthing well trying to make sure your veggies are coated with the herbs (or jalapeno bits). Then put the collander over an empty bowl and cover the collander with a dishcloth. Here is where I get really loose with the directions depending on how much time I've got. But I rarely leave the veggies sitting on the counter in the collander (covered) for more than 3 hours. But I think you could if you accidentally went that long but I have no idea what the maximum time would be. May depend on the veggie. Once your ready to cook, then nothing else special to do but cook. A lot of veggies are good roasted. You can put the results from your collander on a roasting pan and spray lightly with one of those spray cans of olive oil. And then roast for normal amount of time. There will be liquid probably in the bowl beneath the collander. I just discard this though it might be good for making a stock but could be rather salty. Sorry I'm winging most of this but the main point of this is that the salt besides taking the edge off the veggies seems to somehow cause the seasonings to really be drawn into the veggies and penetrates them better than without the brining, IMO. When I cook catfish fillets, I let them sit in the collander with the jalapeno bits and salt covered for a few hours. But inevitably, when I roast them, I need to roast for about 10 minutes, drain and roast some more. Not sure if I get the liquid because my catfish is cheap or what but the final version of the catfish with the jalapeno spicy flavor is nothing short of fabulous. I don't eat catfish any other way now. Yum, yum, yum. Sorry to make this so long but when I went looking on google, turns out there isn't much on this. I posted a pickled carrots recipe in other thread that I love for low fat, diet snacking and healthy too that involves dry brining first with minced jalapenos, then briefly boiling in vinegar and water and chilling in jars in the fridge. If you like spicy food, the salt will really enhance the jalapeno flavor, IMO. Search for "pickled carrots" and I bet it will pop up.

Since you posted about your ladies' luncheon (pot luck) and the mac and cheese with cottage cheese, I've been thinking about it. I'm not crazy about regular mac and cheese, but that sounded not so--well--cheesy. Does this sound like what you had? DELUXE MACARONI AND CHEESE 2 cups (16 ounces) 4% cottage cheese 1 cup (8 ounces) sour cream 1 egg, lightly beaten 3/4 teaspoon salt Garlic salt and pepper to taste 2 cups (8 ounces) shredded sharp cheddar cheese 1 package (7 ounces) elbow macaroni, cooked and drained Paprika, optional In a large bowl, combine cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add cheddar; mix well. Add macaroni and stir until coated. Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350 for 25-30 minutes or until heated through. Sprinkle with paprika if desired. Yield: 8-10 servings.

This corn salad is wonderful. I came up with it after making grilled corn the way they make it in India, and having some corn left over. So the first recipe isn't the salad, but if any of y'all are looking for something different this coming corn season, it's wonderful cooked this way... Spicy Fire-Roasted Corn with Citrus 1T cayenne pepper mixed with 1 1/2 T salt. 4 ears of fresh corn (or more, if you want leftovers for roasted corn salad) One lemon and one lime cut into wedges. Fill a salt shaker with the salt and cayenne pepper.* Shuck the corn and trim ends for corn skewers if you will use them at the table. If it's your first time roasting corn this way, it's a good idea to practice on one ear before committing all to the grill. Brush your hot grill (not the corn) with a bit of oil, and using tongs, place the corn on the grill. Keep an eye on the ears, and turn them occasionally to prevent too much charring in one spot. You do want some browning and a bit of char as the carmelized bits give the corn a wonderful flavor. The corn should be done in approximately 5 minutes, depending upon the freshness and size of the ears. Serve the corn with wedges of lemon and lime and the shaker of cayenne-salt. The diners rub the wedges all over the corn and then sprinkle with the cayenne-salt to taste. * If you have children eating who might be put off by the cayenne, make a second shaker with equal parts of salt and sugar for them to use instead. Leftover Roasted Corn Salad 2 ears leftover fire-roasted corn 4 T lemon/lime juice 2 T honey 1 t salt 1/4 t black pepper 2 cups assorted grated or chopped vegetables. (I like grated carrot, chopped red bell peppers, green onions, diced cucumbers, chopped tomatoes, crunchy celery, thinly sliced radishes and frozen peas, but just use up whatever odds and ends your refrigerator or garden produces! I've even added chopped apples or pears at times!) 1/4-1/3 c toasted, roughly chopped pecans, cashews or hazelnuts* 1-2 T minced fresh herbs (basil, cilantro, tarragon or parsley) -optional- Cut leftover roasted corn from cobs into a bowl and then gently scrape the little juicy bits from the cob with the blunt side of a knife into the same bowl. Mix the lemon/lime juice, honey, salt and pepper in a bowl and whisk until the honey is completely dissolved. Toss the vegetables with the dressing, and let sit at least 10 minutes for the flavors to develop. If you are adding fresh herbs, toss them in just before serving. This salad is wonderful with any simply grilled meat or fish, and pairs quite well with rice or couscous as a starch. It can also be made hours ahead, although it might soften and the colors might fade a bit if you make it the day before. Sprinkle the nuts on top of the salad before serving. *Toasting the nuts really brings out their flavor. Before chopping, put the nuts into a pan over a medium-high heat. Shake the pan gently back and forth as though you were making popcorn until the nuts darken slightly and become fragrant.

I am also tyramine intolerant, and my gf suffered from "IBS" (the doctor didn't know what was wrong with her, so he just lied, IBS doesn't exist, like sciatica, it just means 'I don't know, now please go away' ) for years until we made links between artificial additives and her problems. I also get hypertensive crises from Chinese food, and really from anything that is off, or badly stored or prepared, but what really does me in is the crippling migraines I get from eating the wrong food. They are like a barometer reading, if food is the slightest bit suspect, I am on the deck within the hour. I am also the same with the delicate stomach, I am like that the whole time and have been for some years, although only tyramine will actually make me sick. I must admit, I hadn't made any connection between raw food and upset stomach though, that is very interesting. I know I have to avoid stews, it is just down to the cooking time and the low simmering heat, if the stew simmers too cool for too long then the tyramine levels will climb even in low tyramine foods, especially in beef and lamb stews. Annoying, isn't it? Anyway, don't need to tell you that I am sure. So, what do I eat? Breakfast is porridge, made with water not milk. Lunch is usually something egg related, omelet with shallots (and not onions), potato and sweetcorn, or egg and chips is a good one too. Dinner is normally chicken or white fish. I must stress I only eat whole chickens, the processed breasts and drums, stuff like that, they are "packaged in a protective atmosphere" and as far as I can make out are stored for up to 6 weeks before they hit the supermarket shelves. The whole chickens are much more fresh, but are a bit of a pain to process (not nearly as much of a pain as one of my headaches though), hence I often just roast them whole. Luckily, a lifetime of this has left me underweight, as a diet of roast chicken and chips isn't exactly what fat fighters ordered! Although most food lists say that meat is ok, lamb and beef are normally hung for several weeks to mature. Unfortunately, that is nowhere near fresh food by my standards. For vegetables, I avoid any legumes except garden peas, cauliflower and broccoli seem ok, and carrots. Watch out for ginger, garlic and onion too. Tesco (if they have invaded your local area) frozen mixed farmhouse vegetables have got no beans in them, they work for me. So, it's roast chicken with chips (chipped from potatoes, not frozen ones out the bag) or roast potatoes, chicken curry, stuff like that most of the time, last night was Pollack fillets with chips and a creamy white sauce with herbs and peas. For a cup of tea, which for me is a very important part of my day, I use oat milk (also sourced from Tesco - www.oatly.com ) which makes a nice cuppa... visitors don't even notice. The only migraine I had since starting this diet was from a cup of tea my nan made me... she still gets her milk off the milkman, and it had sat on the step a bit too long that day. I didn't even think about it at the time, one teaspoon of milk won't hurt, will it? Yes, it will, it will hurt a lot. For four days. The oat milk is a good substitute for making a creamy sauce too. For sauces, I use oil (not olive oil), plain flour and juices from whatever I just cooked and a little extra water. I admit, they are not as nice with just water, but my taste buds have adapted. For booze, I have found beer is just Russian Roulette. I love real ales, and malt whisky, but there is no way. Cider, I have found, especially genuine farmhouse cider, is fine. I drink it all the time (actually I make my own), with no ill effects. Well, except the normal ones, the ones you expect and deserve! Other than that, vodka or apple brandy, otherwise booze must be avoided at all costs. It sounds to me that like yourselves we have been feeling our way around this problem... I have been on the tyramine free diet for just 6 months, but I haven't had a migraine for the whole time. Previously, I had one almost every day for 20 years, so I must have got something right now. And you thought YOUR post was enormous! :) Please feel free to email me, I know how awful this tyramine thing is. It is like I have been trapped down a well the last 20 years, the doctors rubbished me and made like I was putting it on. One doctor actually snorted and told me migraines are a womans problem, then sat back and folded his arms. Another two doctors prescribed me MAOI antidepressants, which (now I understand the problem) I realise could have killed me. Just as well I didn't trust either of them, and threw away the prescription! But now at last I am free. If I can help anyone else, I would be glad to.
