Here is the version I did tonight, written as for a non-cook as much as possible: Food Processor, scale, large mixing bowl, strainer or slotted spoon, two pots, mixing bowl, measuring cups and spoons, wooden spoon or other cooking spoon, 9" loaf pan (mine is shiny aluminum), prep bowls, cutting board and knife, pastry brush (preferably silicone) Dry Garbanzo beans, about 200 g cooked weight Dry beans (black eyed peas tonight, white or black beans another time), about 200 g cooked weight 400 g cooked weight dried green lentils 1 onion, about the size of a fist, chopped 2 stalks of celery, chopped 1 large or 4 small cloves of garlic, squished and chopped or pressed Oil for sauteing (I use Extra Light Olive Oil) Carrots, about 8 peeled baby or one large 1/2 c. walnut pieces 1/2 c. almond meal 2 TBSP tapioca starch 2 TBSP ground flax seeds 1/2 cup crumbs (better idea than rice) 3-4-ish TBSP Simply Heinz tomato ketchup (if you're picky--any would do), plus more for brushing on later Be generous on the measures with the spices. Not heaping, but a little rondure. :) 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp chili powder 1/2 tsp chipotle powder 1 tsp smoked Spanish paprika 1/2 tsp black pepper, not too fine 1/2 tsp Morton's table salt (I say go for the iodine when cooking because who wants goiter?) 1 very very generous tsp dried basil 1 tsp dried thyme Day before: Rinse and sort beans, well. Put beans in a heavy pot, cover with water, bring briefly to a boil and let cool, then put in fridge overnight. Day of:Pour off some of the bean water until it's only about a third of the way up. Bring to a moving simmer and cook the beans through to tender. Should take about the time it takes for the water to boil off/be absorbed. About 20 minutes. Add back more bean water if needed. Rinse and sort lentils, well. Cook about a cup of lentils to 3-4 cups of water. Bring to a boil and simmer for about 20 minutes until they puff up. Saute onions and celery. When the onions start going transparent, add the garlic. Continue to cook until soft but not carmelized (brown). Put the walnut pieces in the food processor and pulse until small. Add the almond meal and pulse a few more times to mix. Put nut mixture in mixing bowl. Put carrots in food processor and pulse until small but not minced and loosing their water. Add to mixing bowl. Add the crumbs to the mixing bowl. Measure and combine in a prep bowl: seasonings, spices, herbs, flaxseed and tapioca (i.e., the small amounts of dry stuff). Mix well with a fork. Set oven to 350 degrees F. Drain both the beans and lentils. Measure out 400 grams of the lentils and 400 grams of the beans. Put equal portions in the food processor with a portion of the sauteed mixture equal to the proportion of the beans/lentils. That is, if you're putting in a third of the beans and a third of the lentils, use a third of the sauteed vegetables. Turn on the FP and let it run until a paste develops. Scrape down the sides once or twice. It's done when looking from the top (lid off) it seems well blended and doesn't have big pieces of anything showing. About the texture of stiff hummus. Empty into mixing bowl and repeat until done. Mix the contents of the bowl with your wooden spoon until everything is well distributed. Add the ketchup, and mix. Pour the spice mixture all around the bowl so that it's well spread out, and mix bringing the outside edges in, until all the spice mix is well mixed in and distributed. If you think it needs more color, add another squirt of ketchup. Prepare the loaf pan by generously oiling it (or spray oil). Not enough oil for puddles, but so there's lots on the sides and bottom. Don't do this ahead or the oil will all run down. The oil is for making the crust as much as keeping the loaf from sticking. Put the bean mixture in the pan and smooth the top. Try to get the sides not to stick up so they won't burn. Place in the middle of a 350 degree oven on convection/bake if you have it, or else convection or bake. Set the timer for 45 minutes. If the top is at all dry looking, use your pastry brush to cover it with a thin layer of ketchup. Bake a further 10-15 minutes. When it's ready the edges will just be getting dark and will be pulling away from the sides of the pan. Remove from oven and put on a rack. Let it cool and rest for at least 20 minutes. When the pan's edges are cool enough to touch, place your plate over the pan, grab the edges of both and invert. Garnish as you please. A scalloped or serrated knife will probably cut the cleanest, or choose a thin blade. Just don't press down so hard it squishes. Since I wasn't having company, I went for the practical and unmolded my loaf onto the top of a long Ziploc container. I am also tyramine intolerant, and my gf suffered from "IBS" (the doctor didn't know what was wrong with her, so he just lied, IBS doesn't exist, like sciatica, it just means 'I don't know, now please go away' ) for years until we made links between artificial additives and her problems. I also get hypertensive crises from Chinese food, and really from anything that is off, or badly stored or prepared, but what really does me in is the crippling migraines I get from eating the wrong food. They are like a barometer reading, if food is the slightest bit suspect, I am on the deck within the hour. I am also the same with the delicate stomach, I am like that the whole time and have been for some years, although only tyramine will actually make me sick. I must admit, I hadn't made any connection between raw food and upset stomach though, that is very interesting. I know I have to avoid stews, it is just down to the cooking time and the low simmering heat, if the stew simmers too cool for too long then the tyramine levels will climb even in low tyramine foods, especially in beef and lamb stews. Annoying, isn't it? Anyway, don't need to tell you that I am sure. So, what do I eat? Breakfast is porridge, made with water not milk. Lunch is usually something egg related, omelet with shallots (and not onions), potato and sweetcorn, or egg and chips is a good one too. Dinner is normally chicken or white fish. I must stress I only eat whole chickens, the processed breasts and drums, stuff like that, they are "packaged in a protective atmosphere" and as far as I can make out are stored for up to 6 weeks before they hit the supermarket shelves. The whole chickens are much more fresh, but are a bit of a pain to process (not nearly as much of a pain as one of my headaches though), hence I often just roast them whole. Luckily, a lifetime of this has left me underweight, as a diet of roast chicken and chips isn't exactly what fat fighters ordered! Although most food lists say that meat is ok, lamb and beef are normally hung for several weeks to mature. Unfortunately, that is nowhere near fresh food by my standards. For vegetables, I avoid any legumes except garden peas, cauliflower and broccoli seem ok, and carrots. Watch out for ginger, garlic and onion too. Tesco (if they have invaded your local area) frozen mixed farmhouse vegetables have got no beans in them, they work for me. So, it's roast chicken with chips (chipped from potatoes, not frozen ones out the bag) or roast potatoes, chicken curry, stuff like that most of the time, last night was Pollack fillets with chips and a creamy white sauce with herbs and peas. For a cup of tea, which for me is a very important part of my day, I use oat milk (also sourced from Tesco - www.oatly.com ) which makes a nice cuppa... visitors don't even notice. The only migraine I had since starting this diet was from a cup of tea my nan made me... she still gets her milk off the milkman, and it had sat on the step a bit too long that day. I didn't even think about it at the time, one teaspoon of milk won't hurt, will it? Yes, it will, it will hurt a lot. For four days. The oat milk is a good substitute for making a creamy sauce too. For sauces, I use oil (not olive oil), plain flour and juices from whatever I just cooked and a little extra water. I admit, they are not as nice with just water, but my taste buds have adapted. For booze, I have found beer is just Russian Roulette. I love real ales, and malt whisky, but there is no way. Cider, I have found, especially genuine farmhouse cider, is fine. I drink it all the time (actually I make my own), with no ill effects. Well, except the normal ones, the ones you expect and deserve! Other than that, vodka or apple brandy, otherwise booze must be avoided at all costs. It sounds to me that like yourselves we have been feeling our way around this problem... I have been on the tyramine free diet for just 6 months, but I haven't had a migraine for the whole time. Previously, I had one almost every day for 20 years, so I must have got something right now. And you thought YOUR post was enormous! :) Please feel free to email me, I know how awful this tyramine thing is. It is like I have been trapped down a well the last 20 years, the doctors rubbished me and made like I was putting it on. One doctor actually snorted and told me migraines are a womans problem, then sat back and folded his arms. Another two doctors prescribed me MAOI antidepressants, which (now I understand the problem) I realise could have killed me. Just as well I didn't trust either of them, and threw away the prescription! But now at last I am free. If I can help anyone else, I would be glad to. Leona, found this recipe, not sure if it works for you or not. You could serve it as suggested with applesauce or someother fruit. I am one of those weird people who does not like my French Toast to be sweet. When I make it, I let the bread sop up all of the egg and then I fry it in just a small amount of butter or margarine and then I use butter and salt and pepper when I eat it. My husband and son both want the Maple Syrup. Ann. OVEN BAKED FRENCH TOAST 4 servings 3/4 cup nonfat milk 1/4 cup unsweetened apple juice 1 egg 3 egg whites 1 teaspoon cinnamon 1 teaspoon vanilla 8 slices sourdough french bread Combine milk, apple juice, eggs, cinnamon and vanilla until blended. Place bread in zip-lock baggie and pour egg-mixture over (you may need to use two baggies). Press air out of baggie, close and place baggie flat on counter. Allow egg mixture to settle around bread. Turn baggie and allow egg mixture to settle again. Place in refrigerator (flat) overnight. Preheat oven to 375°F. Spray pan with butter-flavored cooking spray. Place bread slices in pan and spray tops with cooking spray. Bake for about 10 minutes until bottoms are brown. Carefully turn and bake until other side is browned and toast is puffed. Serve with maple syrup or heated applesauce.
