Lori - I don't have Pure White or White Dove trim. I do have BM Ballet White (eggshell) on my walls with Swiss Coffee baseboards, doors & ceiling. The Swiss Coffee was painted many years ago and is likely Dunn Edwards brand or a paint match to that color. The Ballet White was painted last summer and I used the BM brand. It was so much work to paint myself, so I left the doors and baseboards to remain their original Swiss Coffee color. I did paint the dining room chair rail Ballet White (semi-gloss) because I really wanted it to blend in with the walls. I hope that this summer I have the energy to paint the doors and baseboards because I would like them, also, to be Ballet White (semi-gloss). I was thinking of using Ballet White in my living room, but it ended up looking a little green. I think it's a pecularity of the lighting in that room, however, as Winds Breath also looked green. I then sampled Classic Gray which is what I am going to go with. In any case, I think Simply White would look better with Ballet White than Chantilly Lace. Simply White is warmer. Chantilly Lace is a very white white. You'll have to sample as colors look different depending on the lighting. Classic Gray doesn't look very gray in the room I'm using it in.

Where I live (southern California), there are more and more homes showing the trend of painting (interior) the trim the same color (with a different sheen) as the walls. The walls are usually flat, matte, or eggshell. The trim is semi-gloss. To me it seems calmer/restful. it may also make the space feel larger. Either way you choose, fresh paint is always a nice improvement to any home. Please post photos when you are done.

It isn’t painted but I am painting it and have already deposited money. I live in the South and we love painted houses. I'm using Romabio paint that will allow the brick to breathe and should last 20 years.
