Budgeting a small kitchen remodeling - help needed

Hi! I'm afraid most of you have heard these questions tons of times, but I assure you..I'm totally lost!

I've been reading your forum for the past days and I just have more questions than before...Please bear with me in my ignorance and help me if you can! :)

My kitchen has fiberboard cabinets and formica countertops, so I want to replace those chipping cabinets and install wood ones, a subway tile backsplash and marble countertops.

For what I been reading I have several options:

a)we can "do all my homework" and do the project ourselves, taking the risk of finding something behind those walls for which we are not prepared,

b)again, do all my homework and provide almost all materials to the contractor so they just have to install them,

c) hire a contractor to provide all labor and materials and hope for the best.

As we are not prepared psicologically to go with option a (being totally honest here!:) it looks as we will have to deal with a contractor. I have read already tons of nightmare stories, so I'm afraid of hiring anyone off the street, but at the same time we can't afford a "reputable" contractor that will charge 5/10 times for the price of the cabinets only.

Should we just bite the bullet and spend 15-20K for something that could cost us 10K or so if I went to Cabinets To Go and got the cabinets and have a small outfit (they are tons of them) install them and then have someone else install countertops? what will you recommend? For reference, I live in Houston TX.
