You're heading down a rocky road. Finish the bathroom first. If you can't get the boyfriend to do it, then do it yourself. Only once you've done that should you be making a list of other projects. If you don't make it a practice of finishing a project, then you're likely to end up in a house half torn up full of half done projects. And if you are dependent on others to do the projects, they'll never get done without a thick wallet to pay a pro to do them. Develop your own DIY skills and don't rely on anyone else to do stuff for you. If this is the boyfriend's house, also be very careful about how much time and money you put into it without your name on the deed. If it's your house, and you are relying on the boyfriend to do projects, then, well, that's even a worse strategy. Stand on your own feet. It's a great empowering feeling.

So, what needs to be finished up in the bathroom? We can probably talk you through that.

Agreed. Start with completing the bathroom. Success breeds confidence and renewed energy for the next thing, so that's an added incentive.

Presumably the roof is repaired and the spraying cat is gone? Hope so. Those would be two causes of ongoing damage.

Patch & repaint is one thing, but replacing moldings & casings is another dimension of time, cost and know-how. IF you are going to remove trim(do you really need to?) , learn how and do it carefully, i.e. don't make more wall damage in the process, which can happen without the know-how. One of my clients removed all his baseboard & casings with just a hammer and prybar, then hired me to repair many large holes that resulted....which could have been avoided. Unnecessary cost.

If I were in your shoes, yet knowing what I know now, I'd suggest hiring someone to do the moldings....at least a couple rooms to see how it's done.

I'd also hire a painter to prep & prime the walls. Watch and learn. Sure, you can watch youtube, but seeing it firsthand gives a better sense of time involved.

I emphatically second everything hollysprings said. Where do you start? By deciding that YOU are going to do some work on your house. None of the things that you've listed are difficult DIY projects.

Then you need to decide the sequence you'll do things. We remodeled (in a much more major way than you outlined) a 4000 sf house over 5 years and we had a major rule that helped us immensely: one room had to be completely done before starting the next one. That keeps you from having to live in a perpetually undone house, and also gives you a sense of accomplishment when you can say an entire room is done.

So take your list above, and figure out the order. In your case, I'd probably do something like this:
1. Finish bathroom tile, then repair bathroom drywall (if applicable, paint bathroom walls and ceiling, replace bath door trim.

For each item in the above, do some research on how, come here and ask questions, watch youtube videos, etc. and then do it.

2. Pick the next room, do drywall repair, paint, replace door trim.

Consider doing a couple easy rooms first to get the hang of it, and build confidence, and then tackling the one with the really bad drywall.

3. When all the walls and trim are done, rip out the carpet and put down laminate. This is a big job, so you might want to go room by room, ripping out the carpet just before you lay the laminate there so that you're not walking on subfloor forever (been there done that).

4. Finish up with the stairs as your final project.

@ Hollysprings- The only thing left to do to the bathroom tile is a few pieces around the outside that need to be cut. Then grout. I think I can handle it but I'm wondering if I should wait to finish those border pieces until after I get the walls painted.

The roof is repaired and that cat is no longer spraying.

I am going to replace the mouldings and trim because they were custom made and some of the old trim was damaged from the water issue so it had to be thrown away. I am going to replace it with simple 4" pine boards. So far the trim has come out very easily. It wasn't secured to the wall very well.

I was thinking about going through the whole house to repair the drywall first. Then going room-to-room. I'm most likely going to hire someone to do the drywall repair. I can repair the small holes but I think a pro should do the ceiling.

If you are having a pro in to fix ceilings, add the smaller repairs onto that work and have him do them all.

They will be far faster than you and you can get to the fun stuff like painting sooner.
