I just got one. I opted for the Go over the Baby. The latter doesn't come with dies or mats. In the end, the price difference was less than $100. Like you, I won't be taking it anywhere and I have space for it.

It comes eight a 10x10 mat. Other sized mats are available but If you're not cutting anything larger than 10", you won't need a larger mat I guess.

I have the GO and the 5&1/2 and 6&1/2 dies. The 4&1/2 and 2&1/2 and a triangle die comes with it. The one I use most is the 5&1/2 square. Have no interest in the applique dies at all. Cutting is my least fav part of quilting so I really enjoy mine. There is some fabric waste so I cut my fabric in smaller pieces to avoid the waste as much as possible, and I press and starch before I cut. When you turn the handle the smaller one may be hard to secure to the table so it doesn't move. There is only 7 pounds difference between the 2 so that's not a big deal for me. The baby says it will cut 6 layers at a time, I think it would be hard to turn the handle to roll over the die with that many layers, and since my GO will slip I just wonder how much the light baby will slip around.
It will never replace the rotary cutter, IMO, but my cuts have been accurate.

Thanks to you both. I ordered the Go regular size. Like you, wonder how much the Baby will slip & no way I'd see it doing 6 accurate layers.My back complains when I do much cutting, so hope this will help.
Mine won't be going anywhere & I don't do applique.A strip cutter & the HST dies will be about all I'll need.PL
