Can you vent a cooking range through Chimney? x-post

I know you can't vent into fireplace chimney or one used for another appliance. Here's my situation.

We are doing a home addition/remodel in our cold-climate Vermont home, including moving the kitchen and adding a 48" Capital Culinarian (6 burners & Grill). The kitchen design has the range located on an interior wall against a brick chimney with 3 separate flues. The builder's "plan" is to vent the range into the flue that was previously used to vent a propane wood stove. The flue is separate all the way up through the roof and will be sealed from any use other than venting the range.

I have concerns as to whether venting this way will work? It'll be a long run to the top of the chimney...maybe 20ft (up through 2nd floor and out roof). Have heard conflicting things but seems that it can pass code as long as that flue is dedicated to the hood vent and nothing else.

Any advice as to the above, and as to what type of ventilation system/blower/CFM etc. would be best and affordable would be appreciated.

We are kind of stretching things with the high cost of the range (wife is skeptical but indulging my culinary inclinations) and don't want the venting to be the kicker that causes marital..hehem...discord!

The general rule for gas stoves requires an exhaust fan capable of 100CFM per 10,000 BTU. For your stove, I bet you're looking at 700-1000 CFM. Plus it has to be capable of exhausting 20 feet up. That is a high-performance exhaust that requires a 10" diameter flue. If the existing flue is smaller, don't even consider using it.

All these specs should be available from the stove manufacturer and fan supplier. Don't take the contractor's word on these requirements. You're not just exhausting grease, but CO. High-end stoves require high-end exhausts for reasons other than looks.

Wow! 160K BTUs and up for your
unit. Figure a 1000 CFM minimum. Check, too, with your gas supplier whether you need to upsize your incoming gas line.

I'm faced with the same problem. Finishing a log cabin at the moment. The range is on an inside wall. Above the kitchen is a bedroom so venting up is not an option. Having another hole in the roof is just another potential problem spot anyways. The other kitchen walls are log and I'd hate to cut a 6" hole in them. Besides, there is no electrical outlet in the logs for this purpose. So the only option is down through the basement to the outside. According to the building inspector there is no code that prohibits me from doing so. Just check with the range hood manufacturer. Most people (that cook) say a downdraft doesn't work very well, so I'm going with a range hood. The duct will have to run through the wall to the basement and to the outside. This means two 90 degree corner pieces, 6ft duct in the wall, 11 ft duct in the basement and an end cap with backdraft flap. Most range hood suppliers have a calculation in their installation manual as to how many corners and feet are allowed. In my example this just reaches the maximum allowable length. To accommodate the duct in the wall, the wall will need an extra 2x4 frame to create the room for the 6" duct. Any tips to make all this easier will be appreciated.

Thanks, drewguy. I think you're right, just not sure. Did some quick research and found this in the National Fire Protection Standards book (NFPS): 10.7.2.4 A ventilating hood shall be installed above an open top broiler in a residence. 10.7.2.4.6 The hood shall be exhausted directly through and outside wall to the outside or connected to a suitable chimney flue used for no other purpose. I need to figure out whether a vent hood w/ built in blower will do the job or do I need an in-line or remote set up?

You cannot duct into a chimney, but you can run ducting through the chimney as a sort of soffit that contains that ducting. Ducting for range hoods needs to be rigid smooth metal so as to avoid grease buildup. Even if you have a terrific range hood with high CFM and an excellent filtration system, the air that passes through it will still contain lots of microscopic grease particles that can attach themselves quite easily to a rough surface like masonry. Then they build up. That's a fire hazard. It's a particularly nasty fire hazard if this is an old fashioned non lined masonry chimney that already has it's own buildup of creosote from being used as a wood fireplace.

Thanks for your note. I looked into the gas line and the Culinarian is designed to function with normal residential LP lines. At your suggestion, I conferred with the hood/blower dealer who indicated that we should get as close to a 10" pipe as possible, but that if it wouldn't fit a smaller one would handle the range ok, but would be noisier. I'm going to call our chimney tech and inquire as to what will fit. My guess is maybe we can get an 8" pipe through there.

I left out a key word.

upsize your incoming gas line meter

This is for natural gas.

In our own home, over a five burner Dacor gas unit, we used a 700cfm unit with a 10" vent. Pretty deafening at the high setting--used for seafish and tripe (ugh).
