LOOKING for: English Muffin recipe for breadmachines

Does anyone happen to have a recipe for English muffin bread that is made in the bread machine? I have a recipe and the bread is really not bad tasting, but the problem I am having is that it collapses in the center of the loaf and I don't know if it's the recipe or what. My bread machine is new and I checked the trouble shooting section of the book and altered a few things but I don't really see anything more that I can change. I made 2 loaves and they both collapsed. Just wondered if anyone would have a different recipe I could try. thanks in advance of any help you can give me. BT

I make English Muffin bread all the time and have never had that problem.........but English muffin bread is just mixed well........not kneaded which is probably what your bread machine is doing to it. I mix it up til all the flour is absorbed, divide it in 2 and put it in the pan, let it rise for 45 minutes and then bake it.
Why don't you post what you are doing with it??

Hi Roselin. thanks for your response. You're saying that you don't use the bread machine, then, right? The bread machine does knead the dough but I used this recipe in my old machine and never had any problems with it and it also kneaded the dough. However, I'm gonna take your advice, and do it by hand. I'm really getting tired of getting these sunken in loaves. Again, thanks for answering me.

Ellie Topp & Margaret Howard offer a Brinjal Pickle Relish, a Hellfire Date Chutney, a Mango Chutney and a Madras Pickled Eggplant, amongst others in their book Small-Batch Preserving. Their recipes are trustworthy and I think will come closest to offering what you're looking for. There are still a couple of approved mustard pickle recipes thickened with flour. Here's one healthy diet recipe which I've posted before which uses oat bran as well as All-Bran and applesauce. This is part of a Glycemic Index weight-loss diet. They're in the green light - go ahead zone of Rick Gallops' glycemic index list of breakfast or snack foods for those who are trying to keep their sugar and insulin levels down. I made these for many months last year and ate them in place of bread, and will be making them again in the next days. They're delicious! I also freeze them, 3 to a small ziplok bag and take them out of the freezer the night before I need, leaving them in the fridge to defost until the morning. Light & diet friendly Ingredients: 3/4 cup All-Bran cereal 1 cup skim milk 2/3 cup whole wheat flour Sweetener - equivalent to 1/3 cup sugar 2 teasp baking powder 1/2 teasp baking soda 1/4 teasp salt 1 teasp allspice 1/2 teasp cloves 1 1/2 cups 2/3 cup raisins 1 large apple peeled and cut into 1/4 inch cubes 1 low-cholesterol (omega-3) egg, lightly beaten 2 teasp vegetable oil 1/2 cup unsweetened applesauce 1. Mix the All-Bran and skim milk in a bowl and let stand for a few minutes. 2. In a large bowl, mix the flour, sweetener, baking powder, baking soda, salt and spices. Stir in the oat bran, raisins and apple. 3. In a small bowl, combine the egg, vegetable oil and applesauce. Stir, along with the All-Bran mixture, into the dry ingredients. 4. Spoon the mixture into an oil-sprayed 12-muffin tray. Bake at 350F for 20 minutes or until lightly browned. I recently had a delicious muffin homebaked at New Horizon Motel in Christina Lake, British Columbia. It was very dark brown and moist so assumed it had molasses. I forgot to purchase the recipe book they had. Being that it was in Canada the recipe book probably used the metric system which would be kind of a hassle. This recipe is from King Arthur flour and it's the only one I use now. Blueberry Muffins 6 tablespoons butter 3/4 cup sugar 2 eggs 2 cups Unbleached All-Purpose Flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk 2 teaspoons vanilla 1 1/2 to 2 cups blueberries, either fresh or frozen, wild Maine berries preferred 1 tablespoon sugar mixed with 1/2 teaspoon cinnamon (optional) Preheat your oven to 375Â°F. Grease 12 muffin cups generously; a vegetable oil pan spray works well. In a large mixing bowl, cream together the butter and sugar until they're light and fluffy. Add the eggs, one at a time, beating well after each addition. In a separate bowl, whisk together the flour, baking powder and salt. Add the dry ingredients to the creamed mixture, and beat well. Stir in the milk and vanilla. mixing only until smooth. Quickly stir in the berries. Fill the muffin cups 3/4 to almost full, using all of the batter. Sprinkle with the cinnamon sugar. Bake the muffins for 30 minutes, until they're light golden brown, remove them from the oven, and place the pan on a rack to cool for 10 minutes. After 10 minutes, run a knife around the edge of one muffin, and try to lift it out of the pan. (These muffins are very tender, and if they don't cool long enough, they'll crumble when you try to remove them from the pan.) If the muffin lifts out of the pan without crumbling, remove all of the muffins and cool them completely on a wire rack. If the muffin sticks or the top peels off, allow them to cool an additional 10 minutes, then try again. Yield: 12 muffins

You are welcome and it really is easy to make by hand. I never even thought of using my bread machine because mine too kneads the dough. I make two loaves and always use one for bread crumbs..........it is wonderful for bread crumbs for topping casseroles, in meatloaf, etc.

Roselin32, would you mind posting your recipe for English muffin bread, please. I have tried several recipes and am no overly fond of the results of any of them, so your tried and true would be welcome.

WalnutCreek...........sorry it has taken so long to respond to your request.......we have been on a river cruise in Europe and had a fabulous time.....the breads there are wonderful but here is the English Muffin Bread recipe I use all the time.

English Muffin Bread
English Muffin Bread Yield 2 8x4" loaves
2pk yeast
6 c flour
1T sugar
2 tsp salt
2c milk
1/2c water
1/4 tsp baking soda
cornmeal for pans
Combine 3 c flour, yeast, sugar, salt, and soda/
Heat liquids til warm (a bit warmer than a baby bottle). Add to dry mix and
beat well. Add remaining flour to make a stiff batter. Spoon into grease pans sprinkled
with cornmeal. Cover, let rise for 45 minutes and bake at 400Ã¯Â¿Â½ for 25 minutes.
Remove from pan and let cool on rack covered with towel.

Roselin, thanks, I'm going to make some for Christmas breakfast. I'm having a houseful of guests for the weekend so this is going to come in really handy. Cannot wait to get it made. Probably have to make more closer to Christmas.....I'm sure this first one will 'disappear'. LOL
