Clean slate - help pick flooring please? Lots of pics!

It looks like we have to pull up all the tile we had laid (new construction) less than 2 years ago in the foyer, powder room (and cost closet), the kitchen (incl pantry and under appliances) and the mudroom. It was installed incorrectly and we've had problems with it for the past year, I'm done with pulling up tile, putting more screws in, and then putting tile back down. We replaced 60 sf last June and I've probably got about 40 sf more going this year. Both tiles have been discontinued.

Here are some pics of my foyer - all paint and the LR carpet (used also upstairs) were coordinated with this green tile. (Sorry this is right after BC installed in DR so DR furniture is in LR)

LR sofa (shades are on the floor) - even the sofa was chosen to match the green tile, paint and carpet!

FR adjoining kitchen (actually one 37ft x 13ft room) - we are putting matching Romans (striped) in bay window after trim is done. Will eventually put oak flooring and built-in bookcases in, but right now tan carpet is less than 2 yrs old, it was $40/sy so I don't think DH will let me replace it yet - need something in kitchen to go with carpet now and HW later.

Subway tile I would like as a b/s if we replace current laminate (countertop overhang too shallow in front of sink - I spill things down it) with the same thing - but for now just doing oak shoe at the wall to cover gap. We don't *have* to keep the countertops the same, but I just spent $1500 last summer on island countertops to match before I realized problem with perimeter counters. Might easily be 8 yrs b4 we replace counters, and might be different color/material then, but we'd like floor to be neutral so we could have options.

Our floor will support ceramic, but not natural stone (unless Bill can give some ideas how to stiffen the 3/4" OSB, 2x10 joists 16" OC) I don't know whether to do different flooring in foyer and kitchen again, or to do it all the same - not changing wall colors. I really don't want HWs in foyer/mudroom since we have a gravel drive and (right now) not much of a lawn, we track in a lot of grit but we take off our shoes at the door. Thanks!
