Have you considered going with something like the Elfa system from The Container Store. I ask because I am one of those organizer freaks and I hate to waste space and I love this system because at any given time you can simply adjust the shelves so the difference between them is what you need and is not pre-determined. The shelves come both in wire and solid wood and in different depths to suit your requirements. The con side is they are expensive but you're sort of in luck. The Elfa sale is till the end of the month IIRC so you have time to save 30% on your purchase :) I don't have any in the kitchen as my custom kitchen was built with adjustable shelves LOL and these are adjustable to the same 1 " increments as the Elfa system but I have it in every other built in closet in the house including 50 feet of closets in the basement.

We used wood for our kitchen and MBR closet but painted in other bedrooms. I like the stained wood better in the walk-in pantry since it doesn't scratch like paint could and if it did, it's easier to repair. Our trim carpenter built it out to my specs. Shelves are fixed, and after 5 years no regrets or changes wanted. The shelves on the right were built around an HVAC return (deep), and they hold more than they appear in the pictures. I'm wondering what different people here mean by "wire shelving." The comments about it being "cheaper" suggests folks are talking about something different that what I think of for "wire shelving." Mine are several hundred dollars a bay, which is certainly not "cheap", or "cheaper than wood." I suspect people who don't like them have some sort of low-quality shelving, like I've seen for sale in a hardware store around here. I have "Metro" shelving, and it's great. "Cleaning" isn't an issue--it stays clean with having to do any cleaning*. It is rare for there to be a problem with things falling over. Light comes through the shelves, which makes it much easier to see what is there than if they were solid. (I note that I run a lot of it quite close together--like one 14-oz. can high, so that I can pack of lot of stuff in not very much space.) I've attached a link to the kind of shelving I have, except that I have about 8 shelves in the same space as their illustration shows 4 shelves. * Regarding cleaning: I've done some work in a Class 10 cleanroom, and all the shelving there was exactly the same stuff (though the stainless steel version rather than the chrome version, because all the metal in the cleanroom is required to be stainless steel). It's there because it's the cleanest shelving available. To give you some idea of what is expected there, people have to be in bunny suits, wear gloves, and go through and air shower before entering. The advice on the Pantry has been good. It may help you to get fresh sets of eyes on the rest of your plan though. You may have caught hints by commenters, like the bumpout, it's size, the windows, a prep sink, that an entire plan review may help the Pantry along with the rest of the house. From this snippet of the plan I see a very complicated structure with many girder trusses. There is a fake dormer, presumably lined up over this Pantry bumpout. There are parallel gable roofs in the Master and Covered Deck. There are scissor trusses over a flat ceiling of the Mudroom. There is a tub in the bath that doesn't seem to have a Guest Room nearby. There is a convergence of vaulted to flat ceilings and where those hit on walls that is odd. A possible hood exhaust pipe in a vault is slightly off-center, and the discharge route is questionable. Just some things I noticed that might be fine or may not be optimal.
