RECIPE: tomato marmalade

2 lbs ripe tomatoes (about 5 medium)

cut into 1 inch chunks (6 cups)

2 medium lemons, sliced very thin, including skin,

and seeded.

1 medium seedless orange, sliced very thin,

including skin

2/3 cups sugar

2 tablespoons orange-flavored liqueur (optional)

Place tomatoes, lemons and orange in 4 qt pot over high heat. Stirring almost constantly, bring to a boil. Reduce heat slightly; stirring often, cook rapidly 25-30 mins or until peels are tender. Stir in sugar. Cook rapidly, stirring almost constantly, 15 mins. Remove from heat and stir in liqueur. Ladle into containers; cover, cool and refridgerate. Freeze for long storage. Makes 3 cups

I have been looking through tomato recipes since mine are finally starting to rippen. Thought maybe we could all share some recipes since it's tomato time!
